Welcome to howtocookthat.net I am Ann Reardon for a printable copy of any of the recipes
go to the website how tocookthat.net Today we are looking at chocolate decorations
that you can use to jazz up your desserts or your cupcakes.
First of all we will look at piped designs, these are one of the easiest things to do
but if you are not confident in the actual designs you can print out the template which
is on the website and place some baking paper over the top. and here I've just put some
chocolate in a plastic bag and just twisted it at the top so that when you apply pressure
it doesn't come out the other end. And with my designs I like to add a stem to
the bottom so that you can stick that into your icing, your chocolate mousse or your
dessert and you have all of your design on top. There are several different designs that
you can use, just follow the templates just like shown to do all of your different designs.
And the final one you just do a skinny oval followed by a shorter fatter one , shorter
fatter circle and then stem again if you want to be able to stick it in to a cupcake or
chocolate mouse whatever you are making. Next chocolate leaves, these just use any
leaf from the garden you want to paint the back of the leaf so that it looks like the
front of the leaf when it is peeled off. Make sure the leaves are washed and fully dried
so you don't have any water on it and also make sure they are not from a plant that has
been sprayed with any insecticide or pesticide obviously. When you are spreading your chocolate
on try not to let it go around the front of the leaf because it makes it hard to peel
off. Once they have been set in the freezer just gently peel back the leaf and you'll
see that you can see all of the veining and all of the pattern from the leaf comes out
onto your chocolate and looks great. Next we will look at two toned chocolate patterns
I really like these and they are simple to do. You just need a texture mat which these
ones I've got from a childs rubbings book, you can get all different ones quite cheaply
that way in the one book.
Get some white chocolate, spread it out over the mat, then using a knife or palette knife
spread it out make sure it goes into all of the little divets. Then get the excess chocolate
and scrape it back into the bowl. It's important here that you get off all of the excess chocolate
otherwise obviously you are going to get that marbled smeared effect of the chocolate that
is not in the divets, so just put it flat on the bench and give it a few more scrapes
to make sure you've got all of the excess off. Then pop that in the freezer until it
is set. And put your contrasting chocolate over the top. Now the trick here is not to
mix it around as you are spreading it because obviously that warm chocolate on top is quickly
going to melt the small amount of chocolate that is in the spirals. So you want to very
gently spread it out with the minimum amount of mixing it around. Once you've got it spread
then use your palette knife to thin it down to the thickness you want your patterned chocolate
to be. Then put that in the freezer to set and gently and carefully peel off the chocolate
and there you have your two toned chocolate design then you can snap that into pieces,
stick it into desserts. Next some chocolate lace circles using a cup
draw a circle shape then cut around it using a stanley knife or xacto knife Then place
your baking paper that has the circels cut out of it onto some aluminium foil. There
is two ways of doing this you can simply use a spoon and drizzle some across like that
or if you want it to be more of an exact thing put some in the piping bag like you used for
piping designs earlier and just scribble it across, you'll get the most strength if you
scribble it in three directions just gives you a bit more strength. Continue to do that
until all of your circles are covered and then just lift your baking paper off while
your chocolate is still melted before it's set. And then pop those in the freezer
and once they are nice and firm you can just peel them off the aluminium foil and you have

Chocolate Strawberry Roses HOW TO COOK THAT Ann Reardon - YouTube !!!

Welcome to How To Cook That I am Ann Reardon
And today we are going to make chocolate roses which have a strawberry in the middle.
To start with you'll need to make some modeling chocolate and I will link you to that recipe
video on my channel at the end of this one and I'll also put a link to that below.
Roll out 5 balls of your modeling chocolate some can be slightly larger than others that's
fine and just place them on some non-stick baking paper.
And then roll a snake of your modeling chocolate as well and place that there.
Space them out on you baking paper and then place a second piece over the top. And then
gently squash each one and then roll them flat using a rolling pin.
Then do the same with the snake, squashing that long and flat.
Wash and hull your strawberries Then take a cake-pop stick and dip it into
some of the tempered real white chocolate or you could use melted compound chocolate,
either one. And push that into the cut part of the strawberry. And then dip the whole
strawberry into the chocolate, turning it to make sure it is completely encased in the
chocolate. You want to make sure you choose strawberries here that are symmetrical and
cone shaped so they are kind of pointy at the top. Not the huge strange shaped ones.
Let that set. Then take your snake of modeling chocolate
and roll up one end going about half way and this making the centre of your flower.
Using your knife cut off half of the spiral so the underneath half of it making sure you
don't cut off the long end of the snake we still need that.
Now place the spiral on top of the strawberry and then wrap around the rest of the snake
so that it is tight on the strawberry bit but loose at the top so it looks like petals.
Then take your first chocolate petal and place it on the side of the strawberry.
Take your next petal and overlap it over the first one.
And repeat that again with the next one making sure when you look down from the top into
the rose that you can't see any of the white chocolate.
Then gently use your fingers to feather out the top of the petals so that it looks like
they are opening up.
Take another petal and stretch it around to cover the white chocolate at the base and
up to be the right height at the top. Then bend that petal out at the top a little so
it looks like the rose is opening up.
If you have a petal thats not quite round like this one just find the best edge and
use that for the top of the petal and stretch the base down like we did before to make it
reach to the bottom of the bud.
You can leave it just like that or you can continue to add more petals if you want a
fuller flower.
Continue to make more roses, you can do some in white modeling chocolate or coloured modeling
chocolate if you prefer. I just stuck to the milk chocolate and the white chocolate for
this bunch.
In the bunch I also want some of the strawberries to be visible.
because I want some of that bright red colour. Put some chocolate on a cake pop stick and
push it into the cut end of the strawberry and then dip the tip of the strawberry into
the chocolate as well. Then put it into a cup to set. This is a good use up any of the
strawberries that were not pointy on top. And so that you can still use them in your
bunch. Arrange your strawberries and roses on some
celophane with some golden tissue paper or whatever colour you like and then wrap them
up and secure them firmly with some ribbon.
And then they are ready for you to give away, what a yummy gift.

CHOCOLATE CARAMEL PEANUT BOMB How To Cook That Dessert - YouTube !!!

Welcome to How To Cook That I am Ann Reardon
Today we are making a chocolate peanut caramel bomb, this is a very rich dessert so you might
want to share it.
Firstly we need to temper our chocolate, there is a video on how to temper chocolate on the
channel I'll link to that at the end of this one.
Place the tempered chocolate into a hemisphere mold and spread it out so it covers the edges.
Now I am using dark chocolate but you can use milk or white if you prefer.
Tip it upside down and give it a shake to let any excess drip out. We will use that
excess chocolate later in the recipe so keep that.
Flip it back over and use a spatula just to flatten off around the tops.
Then turn it back over and leave it upside down to set.
Now to make our chocolate cremeux which will fill the bottom half you need some milk chocolate
and the left over dark chocolate from making our spheres. Put them in a bowl and place
a sieve over the top. Then next mix together your egg yolks and
sugar,

in grams and ounces and cups and everything that every body needs.
Pour your cream into a saucepan and heat it until it just starts to boil.
Add a little of that hot cream into the egg yolk mixture and stir it the whole time while
you are adding it. Then add the at back into the cream in the
saucepan and stir it in.
Return it to the heat and stir continuosly now you don't want to overheat this or it
will split and become lumpy.
We just want it to heat it until it gets to
sieve onto the chocolate.
Leave it for a moment for the chocolate to melt and then stir it in and keep stirring
it until it comes together into a nice smooth rich chocolatey custard. We want to let this
cool down until it comes to room temperature.
To get the hemisphere out of the mold just hold the edges and push on the top with your
thumb or fingers and just peel back the mold.
Now if it is properly tempered like this it should be nice and shiny and smooth.
Now we want some crunch to our dessert when we are eating it so for that we are going
to make some peanut brittle, Just pour some unsalted roasted peanuts onto a tray lined
with non-stick baking paper and spread them out to a single layer.
Then heat your sugar and water over high heat stirring it until the sugar dissolves.
Then take a pastry brush and wash down the sides of the pan, this gets rid of any sugar
crystals that are on the edge, if you don;t get rid of those it can make your sugar crystalize
back out at the end instead of being smooth.
Then let it boil unstirred until it starts to go golden. Now it can be hard to see through
those bubbles if it is golden or not. So just take it off the heat, let the bubbles die
down and look it the colour, if it's not golden put it back on and let it start boiling again.
Now here I've taken it off the heat and you can see it's golden, if you're not sure just
take a small amount and put it on a cold surface or a plate and it should set up and straight
away and start to go hard and then you'll know it is ready. Then pour it over your peanuts.
Do not touch this as it is hotter than boiling water and it sticks to you so you'll end up
with a bad burn.
While we are waiting for that to cool down. mix together your peanut butter and the maltodextrin
powder adding just one tablespoon at a time. Now maltodextrin is very slightly sweet but
hasn't got a flavour of it's own so it just takes ont he flavour of what you are mixing
it with so we are just going to get a peanut butter flavoured powder that we can use in
our dessert here. Once your peanut brittle is completely cold
you can snap it into small pieces ready to use. i
On a plate place some peanut butter powder. Then a chocolate hemisphere
Then fill it with chocolate cremeux, now your cremeux will set firmer if you put it in the
fridge so if you want it firm just refrigerate it at this stage.
Then sprinkle it with peanut brittle. Then take another hemisphere and press it
onto the base of a warmed pan. This is just going to melt the very edge so you just want
to melt that quickly and put it on top to make the sphere.
To make the caramel sauce is really easy put the cream, butter and brown sugar in a bowl
and stir. Then microwave on high heat for
it 1 minute bursts and stirring it until it is hot and thickened. And you can use this
on icecream and any desserts that you want. Place that into a jug.
Serve your dessert to the table and pour over the hot caramel sauce.
Now the top hollow part of the sphere will melt revealing the peanut brittle inside.
And then you can eat that rich creamy cremeux with the crunchy peanut brittle and smooth
