    week. I am making them and filming them this week for you for those of you who are new
    to the channel I try and do them in order of a cake decorating video then a dessert
    or a sweet snack one and then another chocolate video. So the chocolate truffles will be here
    next week, caramel ones are so good. If you've done them on the stove top your
    mixture is probably a bit hot so you'll need to allow it cool. And then
    whisk in your eggs, followed by the unsweetened cocoa powder.
    I definitely should have used a bigger bowl here.
    And then your flour and your baking powder. Whisk that altogether until it is just mixed
    in then add a dash of marsala which is a sweet italian dessert wine, it just brings out the
    flavour of the chocolate and then a little dash of vanilla. Mix those in.
    Pour that mixture into your baking tray lined with baking paper. Now the one I'm using is

    x 38cm and it's probably just not quite tall enough on the sides mine so to stop it
    spilling over into the oven and making a huge mess I have made my baking paper go up higher
    on the sides and stapled it into place so that it's not going to overflow.
    Coarsely chop up some white chocolate, now you can usee whatever you want here, you can
    add nuts, dried fruit, milk chocolate, dark chocolate, anything you fancy. Just chop that
    up and sprinkle it over the top. And if you want more perfectly looking round desserts
    then you don't need to add anything at all you can leave it plain which will make it
    easier to cut exact circles out of it. Or instead of using this brownie mixture you
    could use the chocolate cheesecake recipe that I've shown you previously or something
    else just use your imagination. Bake that brownie in the oven until a knife
    inserted into the centre comes out clean, and you can smell that brownie smell wafting
    through your house, then you know it's done.
    Allow it to cool completely And then using the same circle object that you used the first
    time cut circles from the brownie, and then you can eat the scrap pieces from the edge
    mmm so good. Using a smaller cutter cut out a circle from
    the centre of each of those.
    Now to make you ganache place your chocolate into a bowl, now I am using a mixture of milk
    and dark that's how I like my ganache to be. You can use all dark, all milk you can use
    white chocolate if you like it is up to what you prefer. Now if you are melting it in the
    microwave be careful not to burn it just give
    seconds then stir it,
    sec stir it and
    seconds stir it and just keep giving ten second bursts until its melted. Then pour
    in your cream and mix it. At first that seems like its not really coming together very well
    but you just keep mixing and it becomes a nice smooth ganache.
    When you are ready to serve your dessert make sure your sauce is nice and warm, remove the
    alfoil from your chocolate disc and place it on top of your dessert add a scoop of ice
    cream. Then serve it to the table and at the table put a spoonful of your hot ganache on
    top and it will melt through the centre of the dessert.
    Now I like to have a real chocolate lava flow to the dessert when people cut into it. If
    you want that as well then put some extra ganache into the centre before you put your
    chocolate disc on and then when you add you ganache on top it will have the same dropping
    effect but then also when they cut into it with their spoon that chocolate ganache is
    just going to ooze out of the dessert making it just unbelievably yummy.

    Welcome to How To Cook That
    I am Ann Reardon and I've had requests this week to show you how
    to make a magic chocolate flower dessert. This dessert is inspired by photos of one
    you sent me one made by Pastry Chef Joaquim Sousa in Portugal.
    Firstly you need something to go in the middle of your dessert. I am using a chocolate macaron.
    I have a whole video that shows you how to make chocolate macarons so I'll link to it
    in the description below. Next take some tempered chocolate and pour
    it out onto some acetate or thin plastic and spread it out nice and thin.
    Then give it a shake from one side just to smooth the top and get rid of any air bubbles
    in your chocolate. Now using the shape and you can print this
    shape out from the website and just use it as a guide make to make a curved line in the
    chocolate, followed by another and another one all the way down to the end. Then turn
    that whole sheet around and repeat that making a curve so that you're making petal shapes.
    Now if you don't want to do this by hand you can instead use two sheets of acetate and
    cut the shape out of top one using a utility knife. And then spread the chocolate over
    the top and then when you lift up the top piece of acetate you'll be left with the petal
    shape. You will need
    petals for each dessert.
    Working quickly before the chocolate hardens curve it up to make a half circle. I am using
    cookie cutters to hold it in place if you have a cylinder that you can use that would
    be even better.
    Now for our base spread some more chocolate onto the acetate and leave to firm up and
    make two chocolate truffles. You can leave them plain or you can fill them with whatever
    you like I've got thirty different chocolate truffle recipes on the how to cook that channel
    so you can go and choose what you want.
    To assemble the dessert use a little chocolate to secure a selection of fruit to the top
    of your macaron.
    Then cut circles of chocolate using a small circle cutter out of that base chocolate and
    then cut each circle in half.
    Take one of your chocolate truffles and use a little bit more chocolate to secure the
    macaron on top of that . Now this lifts it off the base so the petals can go around it.
    Once you chocolate is set, remove the cookie cutters and peel of the acetate. And gently
    seperate out the petals from that spare chocolate. And you can just remelt that spare chocolate
    and re-temper it to use it again. Arrange the petals around a silicone hemisphere
    mold. If you don't have one of these you can just arrange them on the bench but it is going
    to be a little bit harder. Then using some more chocolate add the base
    in place and this is going to hold all the petals in place right where we want them.
    Repeat that of course to make the other half.
    To make our creme anglaise or thin custard sauce. You will need egg yolks, sugar, cream,
    milk and a vanilla bean. I'll put all the recipe quantities on the howtocookthat.net
    website in gram and and ounces and cups. Cut your vanilla bean in half and you'll see
    this sticky mass inside. Just use your knife to scrape it off and add it into the cream.
    Pour the cream and the milk into a saucepan and you can add the vanilla bean pod in there
    While that is heating whisk together sugar and your egg yolks.
    Keep an eye on your cream and milk because you don't want it to boil over.
    Once it just starts to boil remove it from the heat .
    Pour into the egg yolk mixture whisking well as you do. Once it is well mixed in really
    well pour it back into the saucepan. And just put it to one side for now and we'll heat
    that up in a minute. Now take one half of your petals and use a
    little bit of chocolate to hold it in place in the centre of your bowl.
    Then add the chocolate macaron to the middle there.
    And carefully add the other half into place trying not to break any of your petals off.
    If you broke on off like I did just use a bit more chocolate to secure it back into
    place being careful not to fuse it to the other petals. We want each one to be on it's
    own Add a decoration to the top, if you have edible
    flowers they will be ideal but I don't have any so I am using a strawberry cut like a
    flower. Leave that at room temperature. When you are ready to serve the dessert return
    your anglaise to the heat and heat up to 185 degrees farenheit. If you heat it hotter than
    that it will curdle the cream. Immediately pour it through a sieve into a
    jug. Then take your dessert to the table and pour
    some hot anglaise into the bowl. The hot sauce melts the base of the petals
    making them fall open beautifully and gracefully.
    You can experiment with different desserts at the centre of your flower. Why not even
    an engagement ring if you want to propose.

    Welcome to How To Cook That I am Ann Reardon
    Today we are making a surprise instagram chocolate mousse. Now you've requested more dessert
    videos, chocolate mousse and instagram so I've combined all of those requests into one
    delicious dessert.
    To start with we are going to need to make the coloured part of the logo. To do that
    we need four jellos, we are going to need a red one a blue one a yellow one and green
    one. Now I've used strawberry, lime, berry blue and mango flavours here. Mix one jello
    at a time with cream. For all of the ingredient quantities that you need for this recipe just
    go to the blog howtocookthat.net there is a link in the description below this video.
    Now pour that into a saucepan and continue to stir over high heat until it starts to
    boil. Then pour it into a heat proof dish lined with alfoil. Now I found my coloured
    layers on the instagram logo were a bit too thick so if you are using the same sized container
    as me perhaps only tip half the mixture in so you can get those layers thinner .
    You can leave that to set and then once that's set make the next one but to hurry things
    along I like to make them all at the same time. So put the red layer in the freezer.
    Then make all your other colours the same way you did with the red one. Put the yellow
    bowl in the fridge to cool and leave the other two on the bench. Once the red one that has
    been in the freezer has set and the yellow is no longer warm tip the yellow over the
    red one and return it to the freezer. Now put the green in the fridge to cool and leave
    the blue one on the bench. Once the yellow layer is set pour over the green one on and
    return to the freezer. Leave your blue one on the bench and by the time the green layer
    is set the blue one will be cool and you can pour that over the top.
    Then leave that whole thing in the freezer overnight.
    Next make your lens and the view finder parts, I used a coke jelly but I really wasn't happy
    with the results with it, the coke doesn't like freezing and defrosting. It separates
    into a liquid and a weird gel not at all what I was going for. I have since experimented
    by adding various additives like xanthum gum to it before freezing and they didn't help.
    So we are going to abort the coke and I would recommend that you use cake for the lense
    and the view finder instead. So just make a rectangular shaped cake and then cut out
    circels of cake and line it up to make the cylinder shape that we need. And also cut
    out a long rectangle for the view finder.
    Take your deep rectangular container and draw an instagram logo in the right size, sticky
    tape that to the outside of the container to give you a guide as to how high up the
    different mousse needs to come. If you don't think you are very good at drawing then just
    pull up an instagram logo on your computer screen stretch it to the right size, put a
    piece of paper over the top and gently trace the logo over the top.
    Take your rainbow jelly out of the freezer and remove it from the dish. If you are having
    trouble getting it out put it in a sink filled with hot water for
    seconds, do not let
    the water get into the dessert it wants to be below the level of the top. Then take it
    out of the water and you should be able to easily pull it out if not put it back in the
    hot water for a little bit longer.
    Remove all the alfoil and then use a sharp knife to cut a nice slice from the centre
    of your jello. Now you can see what I was saying about my coloured layers being a bit
    too thick for this sized instagram logo so you can adjust that accordingly when you make
    yours. Place it in the top right hand corner leaving
    a gap on the right hand side. Put that back in the freezer while you make your chocolate
    To make your chocolate mousse place the milk, cream and vanilla into a saucepan.
    In a seperate bowl put your egg yolks, sugar and cornstarch and whisk them until they're
    In another bowl again put your water and gelatin, stir that well and then you leave that there
    to bloom or to absorb the water.
    Heat the cream mixture on the stovetop until it boils, then add that a little at a time
    into the egg yolk mixture, stirring it really well after each addition. Once it is all combined
    then pour that all back into the saucepan. Return it to the heat and stir it continuously
    don't walk away keep stirring it or you'll get lumps. And stir it until it thickens and
    then for at least
    seconds longer, and what this does stirring to while its boiling is
    it lets all the starch granules from the flour burst which helps to thicken it but it also
    gets rid of that floury taste. Remove that from the heat, stir in your gelatin
    which will now be a congealed type mass. Keep stirring until the gelatin is melted, this
    will make the mixture go thin again. Melt your chocolate, it does not need to be kept
    in temper just melt it carefully so that you do not burn it and mix it together with the
    custard. Leave it to cool. You should be able to feel it with your finger and it shouldn't
    feel warm at all.
    Whip the remaining cream. In australia pure cream or thickened cream
    or pouring cream are all good, if you are in the USA then heavy cream is what you want.
    If it is called something else where you live then let us know in the comments what it is
    called so that I know what to refer to it as in the recipe for everyone .
    And use a spatula fold the chocolate custard mixture into the cream. scooping around from
    around the bottom up to the top of the bowl so that you keep as much air in the mixture
    as possible.
    Pour some of this mousse over the coloured part, making sure it goes right down and into
    thte gap, You don't want to have a big gap on your logo, so if you need to if move it
    over put the mousse into place and then push back the coloured section over to the side.
    Put a thin layer of mousse on the base. Then cut your cake into a log rectangle out of
    your cake, remember I am using jello here but I recommend you use cake instead. and
    pour over the rest of the mousse making sure it comes up to the level marked on the side
    of you container. Smooth it out as best as you can. Place that whole thing in the freezer.
    To make your white chocolate mousse do it exactly the same wasy as you just made your
    dark chocolate mousse. but using melted white chocolate instead.
    It tastes a bit like vanilla ice cream in a mousse, it's really delicious. Once you've
    got your white chocolate mousse ready take your frozen darker chocolate mousse out of
    the freezer and using a spoon or ice cream scoop scrape down the middle so you have like
    a valley where the lens is going to go. You want it to be a rounded shape there. Looking
    at your logo that you have stuck to the side to see how far down the lens needs to go.
    Just keep scooping out until you've got it to the right level. Then add a little bit
    of your white chocolate mousse down in that valley and then put your lens bit down over

    set and then pour more glaze over the top.
