    How to Make a Wedding Cake: Baking and Frosting (Part 1) from Cookies Cupcakes and Cardio - YouTube !!!
    hi everybody this is Dan from cookies cupcakes in cardio dot com
    I want to welcome you to the first video other three part series on how to bake
    a wedding cake this first video today is going to be
    the process a baking the cake and covering it
    in a buttercream the subsequent videos will include how to tear the cake which
    is stacking it
    and the last video will include how to decorate the wedding cake
    so make sure you stay tuned for those coming up in the future
    let's get started so the first thing I'm going to talk to you about
    are the baking pans to maker three-tiered wedding cake
    the big one at the bottom is a 10-inch round
    I'm cake pan and that's going to be our base
    our next a middle-tier is going to be an
    and our top tier is going to be a six inch round cake
    now each of these will need to be bait to time so when we're finished you can
    have
    to
    inches
    inches and
    inches
    to complete the cake this is called a heating core
    and what this heating core does is you place it in the center
    love each of your pants if you choose to you don't have to use it
    but it kinda speeds up this though it speeds up the baking time
    up the cake any put a little bit of cake in the center as well

    you still have the cake that pops out from the center the heating core
    I'm not going to be using that but I do wanna tell you about it because it is a
    handy thing to use specially when you're making
    I'm larger wedding cakes now these cake pans have street sides
    which is something that you want to make sure that your cake pans have see don't
    have any angles to your wedding cake
    and he's under each three inches high and the cakes will be baking to be about
    a total up to two inches
    in height so we're going to start the baking process next
    we're going to start out baking r6 inch cake
    for the six inch cake you're going to need to cops
    a batter per layer so in total for the top tier
    you're going to need four cups of batter now I am using a homemade vanilla recipe
    which will put a link in the description box for you
    but you can use any kind of cake that you choose you can also use a box mix
    if you prefer that as well you just need to make sure your measurements are the
    same at
    so I'm just taking some non-stick spray and I'm spraying my parent here
    and I'm also putting a layer of wax paper in the bottom
    that just helps put the cake out a lot easier
    when the cake is finished so then in goes my daughter
    and I'm going to be taking this one
    at to
    degrees Fahrenheit and it will bake for about
    I'm
    minutes and then it should be nice and finished
    something pop it in the oven and then I'll have to repeat the process so I
    want you to make sure
    but you're remembering that you have to do two layers per
    size %uh cake pan our next two layers will be the middle tier
    and it is the 8 NH so again and spraying my pan
    and I'm going to be using per layer three-and-a-half cough
    I love leave cake batter for this layer
    give it another stray so you lied seven cups in total for the middle tier
    and it's going to bake 4 so I'm probably about

    to
    minutes at
    degrees Fahrenheit
    so in a pop that in spread this around
    first and then pop it into the open and then
    we will be working on our largest here next
    now we're onto our largest here which will be the bottom in it is the
    per
    inch layer we're going to be using six cops
    a batter so in total we're going to be using
    I
    cups a batter altogether
    for both the volunteers so I'm putting this
    the wax paper and again at the bottom you can use parchment paper if you
    prefer
    and is putting this in now this one being that it's the largest it's
    obviously going to bake for a longer time
    it's still going to be baking at 350 degrees
    and it's going to bake for about
    to
    minutes
    and you just wanna watch it to make sure that it's completely finished in the
    center in springs back to your touch
    so many pop that an and all the dock with all love the cupcakes
    so all six love the cakes have bakes a nice in golden brown
    but if you notice when you been baking Katie might find there's a slight dome
    so what we're going to do next is we're going to level each of them
    of because we can't we will need to have our wedding cakes be completely flat
    so the State Street up and down so I'm going to level of my cakes now
    and what I'm using is a large Ateco cake knife and it's just got a serrated blade
    if you don't have one of these you can just use a regular kitchen serrated
    knife it works just the same
    so I'm just putting it here and in keeping the blade level
    while turning the cake around here on my turntable
    an unjust making sure that I'm using a sawing motion because I don't want any
    part
    up the cake to tare I want it all to be cut in this level
    area here like that and you can see a slide easily of
    just like that someone to repeat that for all six are the layers
    no other cakes are all levels what I'm going to talk to you about next
    our cake boards no keyboards are essentially just cardboard pieces and a
    covered with foil
    this one is quite thin it's that eight-inch one that I'm going to be
    using for my
    8 inch layer now this one is a six inch one and as you can see it fits perfectly
    on top
    love my six inch cake now this one is a bit larger and it's actually called a
    cake drum
    and it's thicker it's meant to be used on the bottom love
    tier cakes or what not now these two I purchased locally at a cake store
    you can find them at Meijer stores such as Michaels and what not you can even
    buy them
    online Amazon eBay try those out they just called cake ports
    and this one actually make made you just cut it out
    out of cardboard and then you cover it with your own foil so that's what we
    need next to support the cake so now we're going to start
    covering it by in buttercream so now I need to
    attach my cakes to my boards
    so I'm going to do out for glue isn't just going to use a little bit if I same
    to smooth out into the middle there like that and then I just put
    my cake in the centre thereof the port
    just like that now you may notice that the because this one is the bottom one
    it is a little bit bigger band that the other
    8 in the six in sports for this one we want the base to be a little bit bigger
    because when you're transporting the cake
    want somewhere for your fingers to be able to go so that's why this board is
    little bit bigger than the actual cake so this win total
    is at
    inches in diameter so now we're just going to start
    by putting a thin layer a buttercream in between here
    like this and then I'm going to plop
    the top part above my knee
    bottom layer summit other tenants just like that
    want too much from the scraping some of like that
    and then and is going to place the second one
    on top just like that so I'm gonna repeat that process
    for each of the three tears now we have all three of our tears
    the layers are all stacked on top now we're going to do is we're going to do
    our crumb coat
    a crumb coat is the initial layer a buttercream
    that goes on to the cake to catch any up these
    crumbs that come off as your applying the buttercream to the sides
    in total I'm probably going to be using about


    cups a buttercream

    to my vanilla buttercream recipe that we already have up on the channel
    so I'm just going to coat all three of these cakes in my initial crumb coat
    and then I'll be back to show you the final step to this
    initial video in the series so the last step

    we've had a lot of people write in to us and asked if I would do
    a YouTube video on how to make your own wedding cake
    or how to do a basic wedding cake that beginners could
    could do at home so I prepared this three-tiered cake
    and for the next
    or
    minutes I'm gonna run through
    right from the beginning to the end after you bake the cake
    icing it covering it with fondant and using some Molesey create some easy and
    effective decorations
    this cake is a some

    a
    in ninety gether will feed about a hundred
    people
    and this top-tier can be kept for the first anniversary
    you can scale this cake down or
    up depending on how many people you'd like as long as you keep about three
    inches
    in difference between your tears
    you'll be fine so if you want to go out to a
    your next one would be maybe a thirteen and then maybe a ten
    and if you want to add a fourth here you can do that too so it's an
    easy cake to make I hope you enjoy this tutorial

    one of them I have I DVD or excuse me are you too
    out on how to slice the cake and fill it and I said
    I have a YouTube on how to cover a cake with fondant
    and I have a youtube on how to color the gum paste flowers
    the pre-purchase flowers so that you can make them your own design your own
    colors and you can accent them the way you want I'll be doing all that in this
    you too
    but the other ones are really reinforcing give you even more depth a
    veg occasion
    so I hope you enjoy this tutorial
    again by using a long serrated knife and cut the top of the cake
    of can use a cardboard
    to slide under it and remove the excess cake
    foot to take over Earth
    use butter cream icing to create a thin layer in between the two cakes
    and I've place the cake
    onyx cake circular or a corrugated cake pad
    that's the same size as the Cape so I have a
    inch cake
    and a
    inch pad
    ok need a small portion of fondant into a long rope
    this is going to create a damn
    around the edges the cake so that you can put a filling in and it won't squish
    out
    attach the damn
    right on the outside edge for the cake
    and then use whatever type the filling you on on the inside
    me to use a raspberry
    the place the next year right on top of the first one face the sides and the top
    with buttercream
    this all needs to be a thin layer because you're going to be covering it
    with fondant
    X and you don't have to worry about
    crumbs make sure you ice right down to the board
    so it seals the cake in and no air gets in and dries out your cake
    okay your cake is now ready to cover with fondant
    the easiest thing to do from here is to place this in the refrigerator
    for about one hour or in the freezer for about
    or
    minutes
    just so the cake firms up to begin by needing
    some white fondant until it's soft and pliable
    sprinkle your work area with a little bit of confectioners sugar
    keep to fund it moving
    don't don't roll very long before you move it when the final gets larger
    you can actually poll the web the rolling pin across state rather than
    rolling
    and it will start stretching it for you the diameter of the fondant
    has to be the diameter of the cake plus four inches for each side
    so I have a
    inch cake I have to add eight inches to that
    so I have to have at least
    inches round a fondant
    alright uses smoother and smooth the top
    role the fun that over your rolling pin very light lightly
    and then just rate over the cake
    the end by moose smoothing the top very likely
    to pull any air bubbles out from underneath thing go around the outside
    edge with your hands
    to adhere it to the cake and then work your way down
    open the folds up
    just push down and the fun that will stick to the buttercream icing
    I uses scissors to cut off any excess
    and then I'll use a knife to trim it
    just using a smoother on the side
    make sure that it's me stuck to the cake
    all the way around and then I'll use
    a spatula or knife and I'll cut flush with the bottom of the board
    I like to use the palm of my hand and just go around the outside edge to make
    a nice slow
    make sure its moods its smooth the top a little bit
    just make sure the sides are all smoothed out if you have an air bubble
    you can use a little straight pin
    and push it into the bubble and then the smoother will push the air out through
    the whole
    there so we have the
    inch layer
    all done and now we'll show you how to stack the cake
    take another piece of fun then and roll-up into a large
    log a little sugar down on your work surface

    I'm gonna roll this into a flat piece
    for using a knife
    or pastry wheel cut one flat edge
    and then roll up the fun that very loosely
    and then place at around the cake
    unrolled around the cake and bring it right up to the edge is the cake
    use your slow there to go back
    impressive down so it goes right up to the board
    in were joined in the back just press it together to make a scene
    and then just use a spatula or knife
    he cut flush with the edger the board
    this gives you a nice finish presentation on the cake
    me we're going to stack the cake next now we have our twelve-inch
    out here has been covered with fondant and its got the buttercream icing it's
    got a filling in between
    now we're ready to stack our wedding cake so the first thing I do is I take a
    look at my
    my covering up my cake and I decide where's the front of the cake
    and where's the back at the cake and I just put a little pin
    a little toothpick right into the phone boards to denote the back up the cake
    now this wedding cake I'm going to offset the tears rather than
    putting them right on top of each other so magically I'm gonna offset
    I'm gonna bring them all toward the back up the cake so
    my next year is at
    a
    inch cake
    so I have a 10-inch Circle and I sorta set it on the cake
    the way I want to look and then all know
    where approximately I'm going to put my Fordow rods
    the DOL rods are an important part of constructing the cake
    to make sure that your cake doesn't leaner tip over as it sets
    so I know exactly where I'm going to put this
    so I've marked three little holes were I'm gonna put if a dollars and I've
    already got a whole ready to go here
    here's the Paul the Dells that we sell on that can be cut to the length needed
    for your cake
    may come
    inches and they're very very sturdy
    that we also make a yellow one that's smaller that will use on the top tier
    so I've cut four of them the same height the best thing to cut them is a
    strong pair of scissors or update easiest thing is a pair of
    a pruning scissors that you would use on small tree branches
    and just push those right down into the cake
    meant remove my toothpick where I want my towel
    me to push it right through the fondant and into the cake
    and you need at least four under every tear
    if I was doing a big
    or
    inch cake I might use six or eight
    but formal do so those go down
    and they said on the bottom board
    now when I take my
    inch cake and I set that on this cake
    the pressure the
    ish cakewalk squash the
    inch cake below it
    dil se on top of the the dummies and I have my
    inch cake ready to go
    we've already covered this one with um Sat nice
    are fondant and I know that the back is here
    and you can see on this cake that I've already got my towels in and I use the
    smaller butter cream colored
    dowels for the top tier they don't need to be as large for small tear
    and I know that this is the backup my cake so
    and put a spatula under there
    and we know where the back at the cake is
    we're gonna set that down
    just turn that a little bit
    and you can move it a little bit if you have to now remember when we covered
    that
    the cake with fondant it was already sitting on a board the exact same size
    I just a quarter inch cardboard so this
    quarter-inch cardboard
    so now these Dahl rods push down and the rest on the quarter inch cardboard in
    between here
    that sits on the pillars that are inside this tier which then
    go down to the bottom tier so the pressure goes from
    from the dowel to the board to the dow to the board and there's no pressure on
    the cake itself
    and then we're gonna put the top tier on can something I didn't do the first time
    but just to show you can do it if you want if you really want to be sure that
    that
    tears sticks want to steer sticks to the other
    you can put a little bit a buttercream and that will work as a glue
    now I have my my top tier is ready to go
    and you can see that that is also on a cardboard
    and that one is gonna go right on the top
    and again I want to be toward the back at the cake
    and now I'll take a look at the front make sure everything's lined up just the
    way I want it
    and there you go now these boards on the bottom in this case will be covered with
    the decoration we're going to do
    if you didn't want any border on the bottom or if you were going to use a
    very very tiny border
    you have to make sure that fun that goes right down arm
    to your plate that you're working on when you cover it in this case we let
    the board show little bit and I'm not worried about that because we're going
    to be covering up
    so now the cake is stacked and it's ready to decorate
    now we're ready to decorate the cake and to make this an easy project and a
    really beautiful cake we're going to use three different moles
    to mold the decorations that go on the bottom and on the sides of the cake
    I'm going to use the Karen Davies Alice
    lace mold which gives me a nice wide ribbon for the top
    Ennis narrower a lace ribbon for the for the top tier
    I'm going to use the Karen Davies pipe rose mold
    and any use that for a bottom border and then I'm going to use
    the Global Sugar Art rose border mold
    also for the bottom just so that we have a small border on the bottom that
    doesn't overpower the cake
    so I'll show you how to mold each one of these I'll show you how we apply to the
    cake
    and you'll be ready to make your own wedding cake
    I'm gonna began with some either gumpaste
    or a mixture of
    percent gun pace and
    percent off on that and you just need
    them together
    the difference is if you use all gumpaste
    he will harden on the cake and as you're cutting you have to cut through it it'll
    break
    if you use a
    mixture a fondant and gumpaste
    you'll be able to cut right through it but it stretches a little bit more it's
    a little bit harder to work with
    if you're a beginner in cake decorating so to begin with
    I'm gonna roll out the paste and I mean do this smaller border first
    so I want a piece that's maybe about a half inch
    in diameter anytime you have any left over just put it in a bag to keep it
    sealed
    I've got a little puff with cornstarch
    and I'm just going to lightly cornstarch that mold
    and then I was gonna dump that right out
    net weight doesn't really fill the cavities okay this isn't
    a really large mall house so I don't need
    this rope to be very big I'm just going to
    follow the contour the mold alright
    men have a little bit of Crisco or some sort of
    a vegetable shortening handy put it on your fingers
    and just push that into the mold
    and use both hands what I like to do is
    II joke about building a little mountain range in the middle
    but that's exactly what I'm doing I'm pushing it to the outside edge
    and then pushing any excess up
    and I'm gonna be cutting that ridge of
    in makes it easier to cut off if it's all gathered in one place
    remove any excess
    so it doesn't have to be perfectly to the edge yet
    right now my my focus is to get rid of the extra
    so many use a palette knife and again a little bit a shortening
    and this will help cut through that extra a
    fondant gumpaste mixture now star in the center of the mall
    not on the end if you start on the annual poll all the product out of the
    mold
    so always start in the center and I'm notice some holding the top with my
    fingers
    and I'm holding it in place as i cud of
    just follow the little
    knots all the axis that'll come off if you're right-handed like I am just turn
    the mold
    put a little more shortening in go in the other direction
    of
    tear a little bit more shortening I'm not using a lot just enough so that it
    doesn't stick to my fingers
    and now I'm pushing it down flush with the edges are the mold
    he completely filling that in and I have no excess
    pace to worry about now because I've cut it all off
    there that's all push down I can roll over to make it may seem even
    and these will pop right out
    I don't know if we can get
    a good close-up shot about mold you can see the detailed
    if you're not happy with the detail on the mold
    it's as easy as putting it back in the mold
    and just pushing it down again with your finger can you be sure you get all the
    details

    the be able to see all the detail in that mold okay
    so both these arm also be done the exact same way
    the larger a lace me band and the narrower
    and then we're going to attach it to the cake so I'm gonna move the cake
    over to the side here and
    this little band is going to go on the top tier
    around the top I like to use a ham marker a lot in cake decorating
    because it can ache and make a mark exactly where I want something to sit on
    the cake
    some basically going to measure here and I decided where I want the top of my
    decoration to sit
    and I've already adjusted this little lever right where I want that to be
    so I'm just going to make
    a couple very very tiny marks
    that you'll never see especially once the fun is over it but this will guide
    me as to where

    now when you when you want to make sure that it's really
    pressed on you can add a little bit of water just push the edges in

    mixtures too soft
    um you can put them in the freezer for maybe five minutes and popping out and
    they'll come right out
    usually if you put a little bit of
    cornstarch in them first and then dump it out
    you'll be fine so I just made that long enough to fit
    put a little shortening on my fingers and again I'm going in from both sides
    making that little mountain in the middle
    and then put a little bit shortening on a palette knife or a
    its or little sharp paring knife and make sure to hold it as you cut toward
    yourself
    I guess that's why use a palette knife I may have cut myself too many times yes
    very in fact years of
    okay and then just
    fill that very end
    there I roll it on the back to make sure it's flat
    and that way when I put it on the cake it hears directly to the cake and i got
    a nice flat surface
    and then pop that out and that is now ready to go on the cake
    and I have some others all made ahead when you make them ahead
    just put him on a board and put them inside over large
    a SIP lock bag and then we'll stay nicely flexible
    same process we're gonna flip these over
    at a little bit a water
    look for the front of my cake which is right here

    five minutes

    maybe a quarter to an eighth of an inch of water up the site at the Cape

    hi I'm check out a show with Global Sugar Art
    about a year year and a half ago I released a YouTube video on how to make
    your own
    fondant covered wedding cake and it's been so popular
    and we've had so many requests to do a buttercream wedding cake
    today we will be doing a buttercream wedding cake in part
    I'm gonna show you how to decorate the porch your cake and also
    how to make this a three-tiered cake if you have a smaller wedding
    or you would like a different style appcake in part two
    we're going to do the beginning steps where she gonna show you how to slice
    the cake
    fill it I set assemble it with dowel rod so that it supported correctly
    and then how to put the tears one topic another
    I to make a cake like this so it's a little bit backwards we're going to
    start with the decorating first this time
    let's get started okay we're back and I have the cake
    all iced and stacked and dowel rods are in place
    so now I'm ready to begin decorating the cake and i got up on my turntable
    the first thing I want to do is I wanna do any measurements that I have to do
    before I put any decorations on the cake so that if I make a mistake
    I can fix that and not have to worry about any measurements being on the cake
    if you look at the wedding cake over here there's no measuring
    really to be done on the bottom tier or the middle tier
    but the top tier I want these lines these vertical
    pipelines to be perfectly up and down and I want them
    the same are depth so I want all these to be about two and a half inches
    the middle ones are going to be about one and a half inch and a little short
    ones are going to be three quarters of an inch
    now you can design any pattern you watch
    for a cake like this this is just something that I came up with that I
    thought would be easy
    I want to emphasize that
    I try to devise a cake that the average decorator with very little experience
    can make and I'm gonna give you some alternative decorating ideas
    as we do this cake so that if you don't have a lot of experience decorated with
    buttercream
    you still can make your own wedding cake
    that's my goal I'm not looking for perfection you're going to see that I
    don't spend a lot of time trying to make the absolute perfect cake here
    I want this to be able I want this to be a project that you can do on your own
    and that you can be proud of that you made your own wedding cake
    or that you made a friends wedding cake so we're going to start with this to
    thirty year which is five inches
    in I've taken regular five sixteenths
    inch ruled arm notebook paper
    and I've cut the pieces a paper in half the neck tape them together
    and you'll see why I am using the rule paper in a minute and what I'm gonna do
    is
    America right around this cake remember that this icing now is dried
    just on the outside so I can put this paper on without
    worrying let me do this for you can see it
    I've cut this paper so that the two ends
    just meet i won just to go around the edge
    and stay in place now the reason I chose
    the five sixteenths inch rule paper which is
    the most popular spacing is because
    every other line is going to be one of my drops
    my drop string works so what I've done
    I've already done this half I take in 10 the lines are the paper
    and I've measured two-and-a-half inches I'm gonna skip a line
    and then I'm gonna do one-and-a-half inches annum in a mark that
    I'm gonna skip a line and do three quarters of an inch
    skip the line and I'm gonna do another three quarter inch
    and now I'm gonna go back to the one-and-a-half
    you skip a line every single time skip a line
    and now we're gonna do two-and-a-half and then back to one-and-a-half
    skip a line
    and three quarters and so on
    and I would do that across the entire piece a paper
    and that's going to be my pattern arm
    like I said you can create whatever pattern you like
    if you want to do a drop string be creative do it do something different
    okay so I'm going to attach this to the cake
    and I'm going to use a couple toothpicks to hold it in place
    you keep in so it's important
    when you tier cake like this to decide
    what is the best looking site where is my front
    up the cake and I think this is going to be my front right here
    and I'm gonna put a toothpick down at the bottom and I'll always know that
    that's the problem i cake
    so if I'm gonna put a pattern on my cake I want to make sure that one had a long
    wanna belong arm
    lines is going to be in the front the cake
    and I'm just gonna wrap this around the back
    hanna Mina put a little toothpick rate in there
    K
    I need to make a whole in the paper first
    there we go
    and annual to a second one
    make a little hole in the paper bring this right up to the top
    and then okay no that's going to hold my pattern in place
    from here I can use one of two things
    group I can use anneal tool or I can use
    a little exacto knife I think many use the exacto knife
    missed are in the front my cake I'm just gonna push
    in through the paper and that's gonna make
    a little lying in my icing and I'm not going to cut all the way up
    Ste but I'm gonna make little little sections
    at least two or three on each one on the small ones I'm going to
    on the medium
    the one and a half inch I'm probably going three and on the large
    both I have tape there you can tell it's hard to go through
    for
    and what this is doing is this is she gonna show me
    on the icing below exactly where my lines are
    where the bottom of each line is and
    its gonna give me our a guide so that I can pipe perfectly straight up and downs

    I'm gonna go ahead and do the rest this and we come back
    will do that we'll start decorating with the bottom tier and we'll work our way
    up
    okay so I've got around the entire cake
    and I've made all my little marks in and now I can take these
    toothpicks out can make it a crime
    my pattern of and you can barely see them
    but on a camera there be very hard to see
    but I can see exactly where those lines are and it's going to make that much
    easier for me to pipe
    the next thing I'm going to do is a man at the satin ribbons and this is a good
    time to talk about
    callers on a cake on the cake that I
    did ahead a time so that you can see the whole project finished I used a white
    buttercream
    using all-white shortening or vegetable fat like risk our tracks or something
    like that
    and I use the clear vanilla it's an imitation vanilla but its is so it's
    clear
    and that gives me a release Snow White icing
    and that tends to be popular in the United States
    what's become even more popular is just
    a good old fashion buttercream that is made with butter or at least partially
    with butter
    arm and in this case that's why you're seeing a difference in color
    this cake with ice with the buttercream that has butter and regular vet now and
    it's all will impart a little bit of a collar
    on this cake I used a really nice white
    satin ribbon hot I don't think that's gonna have the same look if I do that on
    this case
    so I purchased and ivory ribbon
    which is just its of white and I think that that's going to look far better on
    this cake than a white ribbon
    so by their by the ribbon that's going to match
    why did I use a ribbon number one
    I don't have to pipe a bottom border if I don't want to it hides a lotta
    mistakes
    I
    bottom up your cake and if you're a beginner and this is the first time you
    doing a cake like this
    this is a great way to add a some real as I as to the cake
    without having to worry about picking up so to begin with
    we're gonna do this middle tier I'm in a measure around the back
    hand cut my ribbon and
    I've got a little bowl of water here and then what the trip
    panicked
    so what we want to do now is
    take the end to that ribbon see
    get a towel here and I'm going to squeeze out
    any extra water I'm just running this between my thumb in my finger
    and I'm squeezing out any extra water
    and then I'm just gonna dry a little bit so it's not wringing wet
    but it is damn let's find the front of our cake again
    is right here so I want this to go right around the front
    and I'm gonna bring it around the back
    make sure it goes right to the bottom of the cake
    and let's see if I can get that Mason
    flap I have a little piece it's hanging on
    and I'm gonna turn this around for you to see
    how that ribbon just lays flat
    right on itself now as this
    ribbon dries armed
    it'll start clinging to the cake you know contract a little bit
    it'll be a little more Tom and I'm it
    it will arm it will stick right to the K now I see I didn't get right down to the
    very bottom here
    and I want to make sure that I do so I'm gonna actually pull this back
    and I'm gonna make sure that ribbon goes right down
    to the bottom tier there we go and then the water will just help stick it right
    together
    if you want you can actually use a little bit edible glue
    on the back and that are to hold that room together
    in okay so my first ribbon is done I me to do two more
    and then we're going to start decorating the bottom tier so we have our ribbons
    on
    on the top three tiers are not putting one on the bottom and now I'm going to
    pipe
    this rose at border now in
    oftentimes these rosettes can be rather large and you might only fit

    on top at the other on a 4-inch tear so I'm purposely going to make the
    smaller so that I get three rows
    I'm gonna keep these very tight I'm so that they still in this entire layer
    so I wanna show you exactly how to do these it's just a simple circular motion
    on but the tip down and squeeze in a circle you gonna go around once
    twice and then leave the tail
    off to the right and then go over about a
    an inch once twice leave the tail
    once twice
    always bring that tail over to the right hand side
    button that's exactly what we're gonna do
    on this cake now

    in I don't want to start on the front of the cake
    missed our toward the back at the cake pan and I'm gonna do my bottom row

    notice this becomes your bottom border on the cake as well

    okay so what you'll notice is that first row i've
    %uh rosettes I put on were more than a third of the way up
    that's because the next row sits in between each rose at so
    they're not one right on top at the other day they sorta
    once it's a little bit lower on the second-tier and also your third tier
    rosettes comes up over the top of the cake
    so that first row may have looked larger than it should be
    but that's how they will all fit together at the end so now we're gonna
    move along
    and we're going to do the second-tier okay now we're ready to do the
    second-tier
    but i wanna show you an option I'm going to freehand
    a reverse crawl with the number to tip on this second tier
    but if you're new to decorating air this is the first time you're doing a wedding
    cake
    and you want to be perfect there are other ways of doing it
    this is a set of decorative side presses
    are suppress set by Wilton and there's about
    I guess about twenty eight different pieces in here
    with different patterns on each one so
    what you can do if you don't want a free hand it is you can take one of these
    Press sets and just line it up with your buttercream
    can just push it in
    in and you can then turn it over
    I just chose one design
    you can just keep going
    around the cake and that's going to
    Kim boss the pattern
    that you will then a pipe over with the number to tip
    so if you don't want a free hand it you always have the option of using these
    press SET
    he would probably very helpful to keep a bowl of hot water
    to make sure that they're clean and if they were a little bit wet they would

    bare spot because that's all going to be filled in
    when I when I go back over it so that's how that
    that design is done if you want more instruction on that I do have

    border is shown in that video as well okay so we're going to start toward the
    back at the cake

    if a if it makes little mistakes I'm just keeping the tip

    this cake will look beautiful with nothing on this tier

    now go back to where we started
    and I'm gonna put the little embellishment Sen
    hold the tip in the icing and then just put a little
    little pieces little %uh decorations to the side
    little curly Q and starting in the middle
    go in a circular motion and if your pattern was it really rounded

    some six millimeter pearls hand you can use the ivory or the white
    doesn't matter where you start just using a pair tweezers

    and every time I push the Pearl into the icing
    it's pushing that little string icing to exactly what to the cement the cake to
    hide any seam

    RR per roll for millimeter druggie
    that I put into a little container and I've added a little bit of super pearl
    dust

    so you get the idea how that border is done that's all there is to the bottom
    border
    for the top border I'm gonna do a basic shell border
    I'm going to use the same seven-tips and rate at a
    degree angle coming into
    the edges the cake
    and when a pipe a little shell border
    if you have a really smooth top and the edges nicely
    iced you don't even have to put a border on here if you don't want to
    and that would be your top border so now you're second-tier
    is all done we're gonna move on now and we're going to pipe the vertical lines
    on the third tier
    and add the pearls on that here and I do the top border there as well
    okay I'm using a number five tips Wilton tip
    I'm again especially when you have a decoration
    that you want to make sure is your is really arm
    uniform and straight use a small pastry bag you have much more control over it
    in your hand
    then a large pastry bag so I can see
    my little marks that I made with my out my little exacto knife in the paper
    so I know exactly how far down to pipe these and I start from the top
    may just pull away from the cake and then
    just likely push it into the cake when I get to the bottom
    you're going to be adding the pearls on these after
    so this isn't a hard decoration to do but it needs to be
    straight an accurate hand once in a while that happens
    get a little air bubble in your icing
    crop this is why I like to use a needle tool
    just take that of the cake part of the reason that falls off
    is my buttercream is dry it's it's got a little bit across Donna
    so I have to make sure I anchor the top
    pair
    I may have had a big air bubble in my pastry bag to so that's how that whole
    pattern is done all the way around the cake
    and then a minute take some for millimeter jackie's
    and I'm airport one at the end
    every one of these
    so they look like little pearls dropping
    not co-operate up the other side here
    this is the part of cake decorating it takes a little patience and time
    alright so now I have my pearls in that the shape
    and I wanted to add more
    so what I'm gonna do is where I have the second the the second longest line
    right in line with that I'm gonna add one
    ups to the long line and now where the short ones come across
    and then had another rope earlier right in line with those
    now
    and the last one okay
    and then to finish off the border at the top
    I'm gonna move back to a number

    and I'm in a pipe right along the top edge
    scandal attached rainfall right at the very edge
    and I'm gonna go back to my larger pearls

    you can move them a little bit

    all the way around the cake we're gonna move on to the top tier

    a tip 3: and we're gonna do a lil E the valley

    um leaf scroll pattern on the top just think I've mountain peaks
    disco up and down now
    the P goes up like this so I wanna make sure that my leaves
    follow that line here it's coming down
    so I'm gonna come down see want to keep them in the same direction
    I love the the flow that mainline and then you can
    branch of a little bit had
    two more to each one
    and then we're going to move to a tip 67 which is a leaf tip
    and I'm gonna put a leaf
    on the end of each one before I do this on the cake
    I'm gonna soften this icing are so that the leaves come to a nice point
    and that would be the leaves and then I could go back to
    I'm a number to tip and I could put little tendrils in
    and I'm just going to start with the with the a main line was
    and just pull some little tendrils out to send a little circular motion
    and that will finish off that pattern so now I'm gonna pipe that onto the side to
    the cake
    told me again by doing my little
    my little mountain ski
    again I'm not worried about this I i just want the overall shape
    to come out here I'm not worried about what it really looks like at this point
    and then meet up in the back and now I can add my
    my secondary at my little
    for my little these are going to be
    the last one
    okay to pipe the believes I've taken about a half a cup of my buttercream
    icing
    and I've added about a half a teaspoon of glycerin and this is available I will
    turn makes this
    you can buy glycerin in AM in a pharmacy is whether a drug store
    are you can use water but I find the glycerin gives it a nice
    costs of consistency and it and the leaves pull out to a nice point very
    easily
    I think this works better than water and especially in a buttercream
    this this doesn't break apart it doesn't cause the AC to break down
    and separate light-water can so I have might tip

    and now I'm gonna and my leaves if you just
    but pressure build up a little bit
    there news at the ends together are you get a little %uh
    pick a little wrinkle in the leaves just give them a little motion
    the trick is to add enough
    glycerin so that the icing is soft incomes almost to a point
    but if you make it too soft on you get perfect points every time
    sometimes beliefs or to bomb and troops
    on because it's too soft it doesn't actually stay on the site indicate where

    arm the decoration and basically how to do it you don't really need to watch me
    do the entire cake
    he gets a little boring after a while I'm so I'll show you all to basic
    decorations that are on this cake
    so I'm gonna go ahead and finish this now and when we come back
    we're going to work with the styrofoam dummies and we're going to arrange
    are gumpaste flowers on the dummy and then we're going after we get them
    exactly the way we want
    then we'll know exactly where we need to put our little holes in the cake
    and insert some straws where we can put the stems all the flowers in
    and it will be easy to transfer the design from one cake

    a spray of flowers down the side of the cake which we're going to start by doing
    on the cake dummies
    I wanted to show you some options and here's one option right just took
    to sprays all farm hydrangeas
    and I just set them on top the cake with wanted the peonies
    and that's all I put on here and
    that's very popular today is just have a focal flower or very small amount of
    flowers on the top of the cake
    I'm using gum paste flowers today but you can also use fresh flowers if you'd
    like to
    arm whatever whatever you would like to do for your wedding I'm so if I take
    these off
    and but give you another option
    and this is just a peony a yellow peony
    and in this case I would probably set that P ni

    but you can get the visual affect I'll just what one single focal flower will
    do
    for your cake so they give you a couple ideas
    if you don't want a more elaborate of floral
    display so I'm gonna push this aside
    panned I'm gonna bring this over and this is where
    the cake dummies really really come into play
    and become very very helpful so I'm starting with three
    all the love the lily sprays now to prepare these to put into a real cake
    I'll take
    the are small dowels or you can use a drinking straw
    and just insert that
    over the and and then you would cut that
    just so it fits
    and you would insert that into the cake and that protects the cake from our
    from any of the the floral tape or
    any part of the above the out gumpaste flower and it makes it
    food safe so that's what we'll do to prepare but
    to put him into here we're just going to use them as they are
    okay I'm gonna begin by putting in the first Lily spray
    so I'm any use my needle nose pliers
    and I'm gonna bend this back and I know that i'm gonna want to put that
    in this sort of position coming down
    animal I want to put on the edge of the cake so for the dumbing

    I'm just creating a hole in the dummy so that I can put this here

    these pre-made gum paste flowers are really quite sturdy
    and because I'm playing with the dummies I can put this in
    anywhere I want and then just turn the cake
    so that it fills in so that'll be my second month

    wedding you just wanna three tier cake
    with the same design you'll see what it looks like

    what a cute little three-tiered cake this makes perfect for a small wedding
    arm I believe that the whole cake serves about
    people
    that does not include the top tier I allow you to keep the top tier for your

    which is usually the custom here in the United States so these bottom three
    tiers would serve about a hundred and fifty
    these bottom to tears on this cake would serve about
    people
    arm so if you're only having fifty or sixty people
    and you liked this cake there's no reason why you can't bake
    regular cakes and use a Styrofoam dummy as your bottom tier
    you can make this a five tier cake if you want and make par to the cake
    styrofoam
    and then the rest a bit real cake it would still be iced
    and it would still be decorated this is a very very common practice today
    to enlarge your wedding cake and just make it the way you want it to be
    by using star from dummies just like the dummies that I used throughout this
    whole
    procedure today showing you how do you how to decorate and
    how to add the flowers those same dummies can be iced

    martha stewart returns to my kitchen to complete his dream wedding cake see how
    it turns out
    baking with Julia in the previous episode marathon demonstrated how any of
    us with enough pressure variance to get started on this glorious wedding cake
    that will serve fifty people after mixing the batter of almond paste butter
    sugar eggs and flour and pouring it into these diamond shaped cake forums each
    too big an hour and a half to two hours and while the cake layers Big Brother
    created these charming little immersive in fruits right down to little stems and
    leaves she also made a huge amount of her own flavored butter cream and not
    too tired and martha is not going to do this white live this is the deck was

    so first take your cake pan of this is the stack that we've used for that way
