    Welcome to Ashlee Marie. Today I'm going to show you how I level my cakes easily and quickly
    There's a ton of tools out there for leveling your cake, and I've found that none of them work very well
    The little one with the wire, you push it through and the wire tends to snag on things.
    The long one with the serrated blade, it's really flimsy and it tends to bend as you go through your
    cake so it's never completely level. It's really annoying. So I find I have the best luck with a very
    strong, serrated knife.
    This is the same knife that I used for cake carving that I've talk about in the other video.
    Get a turn table. Stand in front of your cake comfortably. If you stand in a really uncomfortable
    position, you're going to find that you slowly go back into whatever is comfortable for you, and
    then you'll end up moving your knife. So feet shoulder length apart, make sure that your knees
    and everything's loose and comfortable. Hold your knife with your elbow tucked into your side,
    and the first time around we're just going to mark it.
    So we're going to let the turn table do the work for us. We're just going to barely hold our blade
    in, and turn our cake making sure to just hold our knife in the exact same spot. And as we go all
    the way around, it's going to create a nice little mark for us. And, it should, by the time you get
    all the way around, you should meet the same mark that you started at the exact same place. If
    you didn't, it means you were moving your knife around, and you should probably start over again.
    That's why the first time around, we just mark it.
    So now that we have a good guide, a good mark, we're going to keep turning it, but pressing that
    blade further in. And as you can see, it's doing the work for us-the turn table. It's taking this
    really nice, strong serrated blade and doing the work for us.
    As you get to the center you'll feel it kind of pop away- pop. And you're done.
    And now I have a cake that is perfectly level.
    If you're trying to get a bunch of layers the exact same height, what I'll do it I'll put the next
    layer on, I'll being the old layer back, and I'll use that to help guide where I'm going to start my knife
    Alright, that's how it's done. Super easy, super-fast and perfectly level every single time. Now
    we have three perfectly level, perfectly even layers and we're ready to frost, fill and stack.

    on how to fill up your cake pan so that you end up with a nice level cake let me
    show you a real nice level K

    together they have a very professional look to them
    first kept is to make sure to tell
    fill up your pants properly I have some cake batter here nice chocolate cake
    and I had mixed up you want to fill up your pants
    approximately half of all
    now this will depend upon your recipe some recipes require you to fill them up
    follow because they don't
    rise this well that I know that this cake recipe

    and today I'd like to show you how easy it is to take a baked cake
    slice it and put a filling into it for
    birthday cake and anniversary cake our wedding cake any occasion you have
    the fillings at a lot of character and flavor to any cake
    so I'm beginning today with the basic
    I just pop it out here this is already been baked and cooled on iraq
    its chilled so that I can handle it a little easier
    and I'm putting it back into the two inch pan that I baked it with
    the reason I'm putting in in the two inch pan is because
    I would like to finish cake between three and four inches
    hi so I'm going to use a lil
    long serrated knife and I'm gonna go right along the top
    edges I love the pan and I'm just gonna cut this off
    and this will give me a perfect 2-inch layer
    appcake from here
    I'm gonna flip the cake over
    you can put on a cake board or anything you'd like
    and this is the Wilton cake slicer
    it's a nice little slicer that told the way it has a protective guard on it
    and it works quite well and you can set
    the the height the ends have a different height settings to you can control how
    high
    you'd like the cake to be sliced so I'm gonna leave it on setting one
    which will basically cut this in
    almost in half now I'm gonna put the flat side down
    and I'm just gonna cut right through that
    now if you don't have a slicer like this
    and you want to make a nice even cut without
    having the guides like that you can take toothpicks
    and you can insert them all the way around the cake exact height that you
    want
    and then you can use the slicing knife and just follow your toothpicks as you
    cut right through the layer
    so if you don't have the slicer you can always use a long knife
    just use toothpicks as a guide okay I'm just gonna set this aside
    start with a are we're going to use a raspberry filling
    and a buttercream filling that I'm going to flavor with raspberry so we'll
    prepare our feelings first
    the feeling that I'm using today is a Henry in Henry
    raspberry filling this is a pastry filling that can be used for cakes for
    turnovers
    offer cookies all kinds have baked products
    it's a wonderful cake filling so I'm just going to slip the end of the bath
    we have some butter cream
    all prepared pan am just going to put a little bit a buttercream
    in a dish
    and I mean I had a little bit of raspberry filling to this
    and what I'm gonna
    get outta this is a raspberry flavored butter cream
    you can put as much as you'd like the fillings come in many different flavors
    there's laymen there's apricot their strawberry raspberry
    um you there's even bavarian cream in chocolate cream but I wouldn't
    necessarily makes those with buttercream
    there's blueberry there's apple many different flavors
    so there's wanted the fillings the other filling
    will be the actual raspberry filling that I have in the bag so here's one the
    layers that I have done already
    I'm gonna take a disposable bag
    and I'm just gonna cut off about one-inch on the end
    can add some butter cream this
    now what I want to do is I want to create
    such damn love icing
    around the outside edge so that now the filling will squish out at the cake
    as I i said or fun doing a tiered cake and I'm stacking one on top of the other
    I don't want to bulge out and and cause
    the filling to sort of squish out between the layers
    so I'm just gonna go right around the edge with the damn love white icing
    of
    and then I can put in the raspberry filling
    great inside hey
    spatula
    now if you're actually doing a wedding cake or tiered cake
    I would recommend
    that you not use butter cream on the outside
    I'd recommend that you actually use fondant and a roll out a rope off on
    then
    and put that around the outside edge you can sorta cemented in place with a
    little bit a buttercream first
    but that will be even more protection from that bulging that can happen
    when you start stacking a cake you can stack a tiered cake beautifully
    and all of a sudden the next day you look at it you realize there's the
    bolger's around the outside edge and that simply from the
    air pushing out at the cake from the way to the Kate
    and you get that bulging so by putting a rope a fondant
    instead a buttercream your prevent that but for simple birthday cake or an
    anniversary cake like this is going to be
    the buttercream will work fine so
    min had a second layer that in place
    and again I'm gonna add
    the buttercream
    and this timer
    I'm going to use the flavored raspberry flavored butter cream
    the
    if I was using a white buttercream filling obviously I wouldn't have to use
    that
    but anything that has caller I don't want to
    to bleed out the side to the cake
    hand that takes care that and then we'll add
    our top layer I'm gonna flip this over
    whoops
    there we go so now you have the cake
    already to ice and finish so this is the first
    in a series that we're doing this video basically covers had it or take a course

    and how to fill it in the next video I'll show you how to properly
    ice a cake with buttercream and even use a cake home to create a design on the
    side
    and then in other videos after this I'll actually decorate this with buttercream
    icing

    to prepare the can what I like to do
    is to take ass pfieffer parchment paper or perhaps a little bit more about that
    later
    and then I like to get up and ready before I began baking in the way that I
    do that some people use butter
    some people use oil some people use a pan spray with flower
    I like to make an increase and the way they make a brief
    is by taking flower and vegetable oil
    and shortening now I tend to be brand-specific when I can because I like
    my product to turn out consistently every time somebody you the best for
    shortening
    attend to do this brand I'm and then for affection well I kinda like the flavor
    profile their second one so I will also use those
    so to make an angry basically you take equal parts of lower
    %uh oil and shortening and mix them together
    and what you get is both kinda have almost liquid gold
    and the way to use that once have been going to completely as you take a pastry
    brush
    for this application I actually like he is one of my I'm
    natural bristle brushes verse is one of the silicon ones because it helps me get
    into the corners
    and then what you gonna do you gonna take it and you're gonna spread
    that pain-free evenly into the entire
    hand the beauty and fifth is that I am NOT trying to get
    grief and flower into the pan
    have for me I've never actually do get into the pan and up all over my kitchen
    it also works beautifully for those shape that you may have difficulty
    getting out
    people take the pantries and precedent for even the smallest mixing crannies

    get a chance with the spray or with oil and flour to get into every spot
    the reason I don't use batteries because but OK
    water and the air pockets in that the water when it melts create moisture
    which can cost ticking when it combines with the flowers almost turns into blue
    when I use the pain grief I don't have that problem the next step
    is to take my future parchment paper if you're fortunate enough to get in a
    circle with spray because at the works already done for you
    you can take a larger piece of parchment paper and cut it down into a circle if
    you'd like to make it fit
    I'm but the fact that I parchment paper and the pain grief
    helps to make sure that I get a great relief every time now
    I like to be campaigns that are three inches D the reason I like to do that is
    because it allows me to bake a cake up significant height
    without having to make you cake and from those in the balance
    when I'm baking a very deep cake or if I'm gonna be baking in a diameter is
    larger than
    inches
    I like to add a little bit of additional insurance this happens to be a flower
    nail
    and the way that issues is usually this way but when I'm baking with it i turn
    it this way
    what I do with
