    videos and so far they may be talking about a particular ingredient
    a decorating element edible papers that go on cookies
    I won't be doing a cookie project from start to finish your creating a recipe
    almost we'll be talking about
    composition of these things and how different variations on them
    differ from one another and their use on cookies so if you're not a techie sort
    I'll bear with me but I think you're gonna get a lot of preparation
    this video when people talk about edible papers when the word comes up and cookie
    dialogue typically I sorta glaze over because
    sometimes are called wafer paper sometimes are caught
    called frosting sheet sometimes they're called edible image is there a whole
    host a

    those differences
    in terms of composition first and then we'll talk about how they vary in terms
    of their application I cookies
    I've got examples are many different edible papers here
    I've got wafer paper which are these first two sheets
    which come pre-printed this these are just some examples from fancy flowers

    is on the backing sheet way for papers don't come on a backing sheet
    but frosting sheets do and here's a temper frosting sheet that's unprinted

    oil dehydrated into this thin sheets its Britt of
    I it airs and its relatively sheer
    I don't often get life behind that and see got a dark cookie here

    wafer paper is how does that differ from frosting sheets well gets a little bit
    more complicated because frosting sheets come in at least a couple varieties
    this particular 1 I've got reprinted here is

    you can't see much through it which is great if you're putting it down a dark

    other elements namely corn syrup corn syrup derivative sugar
    so they are inherently sweet whereas wafer paper is

    if you've ever had rice paper like a communion wafer pretty darn case last
    on this will have some sweetness to it at the end of the day that difference
    doesn't matter much flavor wise because
    all these papers get applied to icing or
    with corn syrup to a cookie so they all end up being somewhat sweet as for that
    second variety a frosting sheet
    I've got it here in unprinted version
    in this one the stars in is actually cornstarch
    its US sugar in it like the other frosting sheet but it is the most
    opaque heavy I've the three papers
    and I this might be best seen in a side view
    they're all very very thin so you know they
    don't at a lotta water interference to the cookie texter
    but this is the heaviest I've the three that said
    if I'm applying frosting sheets our way for papers to cookies
    because they're is some body in weight to the paper
    I prefer to use if I'm gonna be covering a lot of a cookie
    I prefer to use for the most part a wafer paper because it dissolves much
    more rapidly on the tongue
    shearer you're not going to have as much text row interference
    there are circumstances however where I do use frosting sheets and thats
    in cases like this will bask in here that I made all slide over
    in my previous video here I wrapped the side to the basket with frosting sheet
    the reason I did that was because I needed to apply it vertically
    in that in frosting sheets will stick to make cookies whereas wafer paper
    will not it's hard to ice the cooking a cookie vertically so that said the

    paper directly

    corn syrup

    don't get your paper very very wet
    the wafer paper special is more vulnerable to being wet because it will
    buckle
    and possibly dissolve so just enough to get a tacky
    I just wanna show you how it hot sticks or doesn't stick to a naked
    cookie
    is wanting to continue his really want to lift on the edges
    so we'll Bowl apply a little more corn syrup and see if that does the job
    but some and then we'll come back and look at that compare to the frosting
    sheet

    except for good take off the backing paper

    your work surface with parchment paper
    when you're working with corn syrup
    you can quickly get your surface all yet happen that it gets on top of that

    pressing on its pretty much clinging to the Service and the cookie

    so even if they're left out at room temp for some period of time enough to dry
    out much more than they already are

    whereas the edible images are flexible and five on therefore better for bending

    but Harvard we have them out at room temperature cure and a cool dry day they
    will become brittle and crack
    so for storage purposes when not in use you wanna put them back in the container
    the bag that came and with a resealable make sure they're

    I got to remove the backing paper first

    but again for all the reasons I've accuracy of placement
    think getting in this position I want it I don't really feel much of a need to

    do this while the icing as well just takes a little misstep like I did there
    to hit the ice thing
    and leave a spot on but you'll see frosting she
    as much better when I sing wafer paper
    getting wet damp up to that but I sing
    not a good thing okay so what are most often do you are probably alluded to it
    already
    butts I most often apply
    wafer paper to cookies because it has lost external interference mai
    most often do it actions they always do and I could be that's been thoroughly
    drop top coated
    and thoroughly dried because then it will stick down much better than it does
    on a cookie or on that white icing
    number uses corn syrup again you could loosen up a royal icing with a little
    bit on water
    and should be written the same way I do know decorators that do that
    but because the corn syrups totally clear because it
    papers transparent translucent
    your actual likely to see strokes the royal icing or swipes
    behind it are colored there is an ecard so gotta
    just tacky make sure it's up to the edge here
    and I'm in a late on this just in the center are not doing anything fancy here
    and stick it down when I
    now if it's not perfectly centered which it wasn't I have the ability
    because the bottom is dry actually slide it over to where I want
    I couldn't have done that on that what cook even if it had stock
    so just to summarize use a wafer paper on these various
    cookies it lies nice and flat
    sticks down the edges almost immediately on a cookie that's
    thoroughly top top coat and thoroughly dried I should say
    is still struggling to stay down on those naked cookie no matter how hard I
    press
    in the third cooking where fight it directly to what I sing it it's it's
    just rather a train wreck
    look at how thats curled up in the icing on it as all disfigured so
    this is my preferred method for applying wafer paper and oftentimes all do with
    frosting sheets as well cuz I like to have some under collar
    a cookie are always showing one other nuance
    between these two types of paper frosting sheets
    and wafer paper is that because frosting sheets have a lot to buy it to them
    and stick down to cookies whether naked or iced
    they really don't lift when I on top of them so almost immediately
    I would say immediately after applying a frosting sheet to a cookie
    I can come in and apply icing on top without the paper lifting
    I'm just gonna do some beads around the center this cookie
    to hope we demonstrate about icing a bead work consistency in here which is
    really loose

    somebody just put them halfway around and then we'll come back and look and

    with the camera and see if that paper
    has lifted off the edge

    with wafer paper describes fairly stock down but there is a tendency
    for wafer paper once its first come a cookie before that current corn service
    thoroughly dry and those edges ur
    early anchored to the underlying icing for the additional icing on top because
    those edges to left
    I'm why am I saying the sunrise is a big deal wall typically with my decorating I
    like to cover the edges that the wafer paper I don't like it to look so cut and
    pasted some noise putting a border
    so with them when working with wafer paper I need to be extra careful about
    allowing adequate dry time between
    the time I stick it down in the time I've icing on top
    so this one is actually relatively dry it might not live set mine to
    demonstrate my point
    and you might step take my word for it
    report some icing on the edge here and more
    come back and see what happens to the edge
    here if it lifts than you believe me
    hopefully if it doesn't work then you have to take my word for the fact that I
    would advise more drying time
    so my set that aside
    back to the peace for the frosting sheet on it there's absolutely no
    lifting above the paper what so ever
    so that makes it easier application in general but the downside a frosting
    sheets as they are gummy or paste your because I've those starts as they have
    in them
    tapioca starch in cornstarch in particular make them
    I'm a little more at text really obvious on top of a cookie
    I'm not too much trouble honestly with this this particular wafer paper that's
    down
    maybe because I just go out after I time on it alright just got lucky this time
    but again I'm you know you do have to be careful with this said just
    is lifted already without any icing on it so
    even before you apply the border you might have to run your finger over the
    edge in a way for paper before you can get that icing down
    so that concludes by law that science talk about the differences between
    frosting sheets and wafer paper and how they respond differently on cookies
