English - How To Make Cookie Dough Cookies with Christina Tosi English - How To Make Cookie Dough Cookies with Christina Tosi I'm Christina Tosi fromMomofuku Milk Bar, and today I'm gonna be makingmy cookie dough cookie. [MUSIC] So, the cookie doughcookie is not something that we actuallyserve at Milk Bar. It's sort of likemy dream cookie. I'm a really bigcookie dough fanatic. I like a baked cookie butto be honest I'd rather just eat a hunkof cookie dough. So, the cookie doughcookie is chocolate chip cookie dough that'sbaked at a really high temperature in the ovenfor just a few short minutes so that it bakesa layer of cookie but the center ofthe cookie is still like a big scoopof cookie dough. It starts with unsaltedEuropean style butter. Half a cup ofgranulated sugar and three quarters cup oflight brown sugar. I do a nice packing intothe measuring cup to try and get a niceconsistent amount. So, I have my butter,my two sugars in a stand mixer witha paddle attachment. I usually let that go fora minute or two just until the threeingredients really start churning together. One large egg,two teaspoons of vanilla extract and a littlesplash of whole milk. Throw the mixer back onhigh for another two or three minutes just so itbecomes nice and fluffy. I'm just looking forit to double in size and for the color to becomea little bit more pale. Next up are the dryingredients. For a good chocolate chipcookie, you need flour. It's one and threequarters cup of flour. A quarter teaspoonof baking soda, and three quarters teaspoonof baking powder. And then salt. One of our secretweapons in cookies is milk powder. Milk powder is literallypowdered milk. You can find it in thepowdered drink aisle of the grocery store. So we add twotablespoons of this nonfat milk powder. So I do two cups ofchocolate chips. I like mini chocolatechips in my chocolate chip cookiebecause it means you get a little bit of chocolatechip in every bite. I mix them for a veryshort period of time. The secret to a reallygreat chocolate chip cookie is to not overmix the dry ingredients. So I'm mixing them forprobably about a minute, just until theycome together. [MUSIC] I put a whole lot ofchocolate chips in there. This is my excuseto [LAUGH] test the dough out. From there,I scoop my cookies. There's less guiltinvolved with eating one big cookiethan with eating multiple small cookies. I usually leave twoto three inches in between eachcookie just cuz they're gonna spreada little bit. Because I'm only gonnabake this cookie dough at a really high temperaturefor a short period of time the cookies aren'tgonna spread very much. I just take the palmof my hands and smush these guysdown a little bit. From here,I'm gonna throw them into a degree ovenfor about That's the highesttemperature that my oven will go. [SOUND] I keep an oventhermometer in our oven, just to make surethat it's holding So. You can see them gettingreally golden brown. I'm gonna give themanother minute. But I'm looking for, especially theseup front here, to get just a littlebit more color on them. [SOUND] My cookies looknice and golden brown.
