Making Your Own Buttercream Wedding Cake
hi I'm check out a show with GlobalSugar Art about a year year and a half ago Ireleased a YouTube video on how to make your own fondant covered wedding cake and it'sbeen so popular and we've had so many requests to do abuttercream wedding cake today we will be doing a buttercreamwedding cake in part I'm gonna show you how to decorate theporch your cake and also how to make this a three-tiered cake ifyou have a smaller wedding or you would like a different styleappcake in part two we're going to do the beginning stepswhere she gonna show you how to slice the cake fill it I set assemble it with dowel rodso that it supported correctly and then how to put the tears one topicanother I to make a cake like this so it's alittle bit backwards we're going to start with the decorating first thistime let's get started okay we're back and Ihave the cake all iced and stacked and dowel rods arein place so now I'm ready to begin decorating thecake and i got up on my turntable the first thing I want to do is I wannado any measurements that I have to do before I put any decorations on the cakeso that if I make a mistake I can fix that and not have to worryabout any measurements being on the cake if you look at the wedding cake overhere there's no measuring really to be done on the bottom tier orthe middle tier but the top tier I want these linesthese vertical pipelines to be perfectly up and downand I want them the same are depth so I want all theseto be about two and a half inches the middle ones are going to be aboutone and a half inch and a little short ones are going to be three quarters ofan inch now you can design any pattern you watch for a cake like this this is justsomething that I came up with that I thought would be easy I want to emphasize that I try to devise a cake that the averagedecorator with very little experience can make and I'm gonna give you somealternative decorating ideas as we do this cake so that if you don'thave a lot of experience decorated with buttercream you still can make your own wedding cake that's my goal I'm not looking forperfection you're going to see that I don't spend a lot of time trying to makethe absolute perfect cake here I want this to be able I want this to bea project that you can do on your own and that you can be proud of that youmade your own wedding cake or that you made a friends wedding cakeso we're going to start with this to thirty year which is five inches in I've taken regular five sixteenths inch ruled arm notebook paper and I've cut the pieces a paper in halfthe neck tape them together and you'll see why I am using the rulepaper in a minute and what I'm gonna do is America right around this cake rememberthat this icing now is dried just on the outside so I can put thispaper on without worrying let me do this for you can seeit I've cut this paper so that the two ends just meet i won just to go around theedge and stay in place now the reason I chose the five sixteenths inch rule paperwhich is the most popular spacing is because every other line is going to be one ofmy drops my drop string works so what I've done I've already done this half I take in 10the lines are the paper and I've measured two-and-a-half inchesI'm gonna skip a line and then I'm gonna do one-and-a-halfinches annum in a mark that I'm gonna skip a line and do threequarters of an inch skip the line and I'm gonna do anotherthree quarter inch and now I'm gonna go back to theone-and-a-half you skip a line every single time skip aline and now we're gonna do two-and-a-halfand then back to one-and-a-half skip a line and three quarters and so on and I would do that across the entirepiece a paper and that's going to be my pattern arm like I said you can create whateverpattern you like if you want to do a drop string becreative do it do something different okay so I'm going to attach this to thecake and I'm going to use a couple toothpicksto hold it in place you keep in so it's important when you tier cake like this to decide what is the best looking site where ismy front up the cake and I think this is going tobe my front right here and I'm gonna put a toothpick down atthe bottom and I'll always know that that's the problem i cake so if I'm gonna put a pattern on my cakeI want to make sure that one had a long wanna belong arm lines is going to be in the front thecake and I'm just gonna wrap this around theback hanna Mina put a little toothpick ratein there K I need to make a whole in the paperfirst there we go and annual to a second one make a little hole in the paper bringthis right up to the top and then okay no that's going to hold mypattern in place from here I can use one of two things group I can use anneal tool or I can use a little exacto knife I think many usethe exacto knife missed are in the front my cake I'm justgonna push in through the paper and that's gonnamake a little lying in my icing and I'm notgoing to cut all the way up Ste but I'm gonna make little littlesections at least two or three on each one on thesmall ones I'm going to on the medium the one and a half inch I'm probablygoing three and on the large both I have tape there you can tell it'shard to go through for and what this is doing is this is shegonna show me on the icing below exactly where mylines are where the bottom of each line is and its gonna give me our a guide so that Ican pipe perfectly straight up and downs UK I'm gonna go ahead and do the rest thisand we come back will do that we'll start decorating withthe bottom tier and we'll work our way up okay so I've got around the entire cake and I've made all my little marks in andnow I can take these toothpicks out can make it a crime my pattern of and you can barely seethem but on a camera there be very hard tosee but I can see exactly where those linesare and it's going to make that much easier for me to pipe the next thing I'm going to do is a manat the satin ribbons and this is a good time to talk about callers on a cake on the cake that I did ahead a time so that you can see thewhole project finished I used a white buttercream using all-white shortening or vegetablefat like risk our tracks or something like that and I use the clear vanilla it's animitation vanilla but its is so it's clear and that gives me a release Snow Whiteicing and that tends to be popular in theUnited States what's become even more popular is just a good old fashion buttercream that ismade with butter or at least partially with butter arm and in this case that's why you'reseeing a difference in color this cake with ice with the buttercreamthat has butter and regular vet now and it's all will impart a little bit of acollar on this cake I used a really nice white satin ribbon hot I don't think that'sgonna have the same look if I do that on this case so I purchased and ivory ribbon which is just its of white and I thinkthat that's going to look far better on this cake than a white ribbon so by their by the ribbon that's goingto match why did I use a ribbon number one I don't have to pipe a bottom border ifI don't want to it hides a lotta mistakes I bottom up your cake and if you're abeginner and this is the first time you doing a cake like this this is a great way to add a some realas I as to the cake without having to worry about picking upso to begin with we're gonna do this middle tier I'm in ameasure around the back hand cut my ribbon and I've got a little bowl of water here andthen what the trip panicked so what we want to do now is take the end to that ribbon see get a towel here and I'm going tosqueeze out any extra water I'm just running thisbetween my thumb in my finger and I'm squeezing out any extra water and then I'm just gonna dry a little bitso it's not wringing wet but it is damn let's find the front ofour cake again is right here so I want this to go rightaround the front and I'm gonna bring it around the back make sure it goes right to the bottom ofthe cake and let's see if I can get that Mason flap I have a little piece it's hangingon and I'm gonna turn this around for youto see how that ribbon just lays flat right on itself now as this ribbon dries armed it'll start clinging to the cake youknow contract a little bit it'll be a little more Tom and I'm it it will arm it will stick right to the Know I see I didn't get right down to the very bottom here and I want to make sure that I do so I'mgonna actually pull this back and I'm gonna make sure that ribbon goesright down to the bottom tier there we go and thenthe water will just help stick it right together if you want you can actually use alittle bit edible glue on the back and that are to hold thatroom together in okay so my first ribbon is done I meto do two more and then we're going to start decoratingthe bottom tier so we have our ribbons on on the top three tiers are not puttingone on the bottom and now I'm going to pipe this rose at border now in oftentimes these rosettes can be ratherlarge and you might only fit
on top at the other on a 4-inch tearso I'm purposely going to make the smaller so that I get three rows I'm gonna keep these very tight I'm sothat they still in this entire layer so I wanna show you exactly how to dothese it's just a simple circular motion on but the tip down and squeeze in acircle you gonna go around once twice and then leave the tail off to the right and then go over abouta an inch once twice leave the tail once twice always bring that tail over to the righthand side button that's exactly what we're gonnado on this cake now
in I don't want to start on the frontof the cake missed our toward the back at the cakepan and I'm gonna do my bottom row there's a line been try to keep them as even as you can notice this becomes your bottom borderon the cake as well up sometimes you might get a little airbubble I didn't mention that this is a tip one am from Wilton it's a very large startet and I'm just using this with a I'm an if you don't have a lot of decoratingexperience stay with the it's easier on your hand control itbetter are not to the end UK I'm gonna stop there and show you how webuild the rest is this cake in between the first two shells I'm now going to create another one Iwas bring that Taylor over so you can see that the secondrochelle's sits in between the ones on the bottom and I'm going to refill my bag skin okay now that I have my second row I'mgonna go in between two better on the second row and I'm gonnabuild my top row notice I'm going up just over the top of the cake and that'swhat's making my top border so the Beano their borders on thisbottom cake and that's how the whole bottom tier isdone do your first border all around than your second and then your third andyou're done your bottom tier I'll be finishing this one and thenwe'll go on we'll do the rest to the cake okay so what you'll notice is that firstrow i've %uh rosettes I put on were more than athird of the way up that's because the next row sits inbetween each rose at so they're not one right on top at theother day they sorta once it's a little bit lower on thesecond-tier and also your third tier rosettes comes up over the top of thecake so that first row may have looked largerthan it should be but that's how they will all fittogether at the end so now we're gonna move along and we're going to do the second-tierokay now we're ready to do the second-tier but i wanna show you an option I'm goingto freehand a reverse crawl with the number to tipon this second tier but if you're new to decorating air thisis the first time you're doing a wedding cake and you want to be perfect there areother ways of doing it this is a set of decorative side presses are suppress set by Wilton and there'sabout I guess about twenty eight differentpieces in here with different patterns on each one so what you can do if you don't want a freehand it is you can take one of these Press sets and just line it up with yourbuttercream can just push it in in and you can then turn it over I just chose one design you can just keep going around the cake and that's going to Kim boss the pattern that you will then a pipe over with thenumber to tip so if you don't want a free hand it youalways have the option of using these press SET he would probably very helpful to keep abowl of hot water to make sure that they're clean and ifthey were a little bit wet they would press into that I sing in pole right out and they wouldn't pull little pieces arethe icing out that would be covered over when you pipe over it anyway so that's an alternative if you don'twant a free hand but I am going to freehand it and I'll show you basically how to do theriver scroll and first you start with just a basic scroll pattern don't worry if itdoesn't complete that's not my my object right now isjust to get the pattern on the cake so I'm going in oppositedirections and then I'm gonna add a littleembellishment and then starting in the middle of each and I'm piping right over that design and then I'll do the same thing here nowyou see why I wasn't worried if the icing skipped are left a little bare spot because that's all going to befilled in when I when I go back over it so that'show that that design is done if you want moreinstruction on that I do have a.m. a video out harm on what piping with the round tubes andthat border is shown in that video as wellokay so we're going to start toward the back at the cake again I'm not worried about if a if it makes little mistakes I'mjust keeping the tip of the edge a little bit and I'm tryingto use as much as the available space as I have the this decoration is not a necessityon this wedding cake this cake will look beautiful withnothing on this tier except the satin ribbon and maybe a topborder UK now go back to where we started and I'm gonna put the littleembellishment Sen hold the tip in the icing and then justput a little little pieces little %uh decorations tothe side little curly Q and starting in themiddle go in a circular motion and if yourpattern was it really rounded I'm your your sweet when you when youmade the Crescent are the the scroll you can correct itnow your I usually try to put thoseembellishments in first sometimes I forget okay so we'll do one more and then I'llgo ahead and finish this tonight is going to be the screw theRiver scroll on the side of the cake in okay so the scroll is is done and now I'm going to do thebottom border on here I'm using a number seven tips I by eighty core Wilton started the backat the cake and you just want to lift of the cake answer to drop this string right at thevery edge where the two cakes meet and if you have to stop and move thecake it's okay to do that and just pick upwhere you left off noticed I'm going slow and I do this soI can try to keep the icing has even as possible and that falls inthe right spot and one more round the back okay now the easy part is I'm going toattach some six millimeter pearls hand you canuse the ivory or the white doesn't matter where you start justusing a pair tweezers and about every inch who's going to push a pearl into thaticing and every time I push the Pearl into theicing it's pushing that little string icing toexactly what to the cement the cake to hide any seam closer to eyeball these now the the I'm that I'm using here I'm these are the super white high glosspearls the smaller ones that I we use on thetop RR per roll for millimeter druggie that I put into a little container andI've added a little bit of super pearl dust and just makes them around so that thereare their shiny ran a match these better group okay so you get the idea how that border isdone that's all there is to the bottom border for the top border I'm gonna do a basicshell border I'm going to use the same seven-tips andrate at a degree angle coming into the edges the cake and when a pipe a little shell border if you have a really smooth top and theedges nicely iced you don't even have to put a borderon here if you don't want to and that would be your top border so nowyou're second-tier is all done we're gonna move on now andwe're going to pipe the vertical lines on the third tier and add the pearls on that here and I dothe top border there as well okay I'm using a number five tips Wiltontip I'm again especially when you have adecoration that you want to make sure is your isreally arm uniform and straight use a small pastrybag you have much more control over it in your hand then a large pastry bag so I can see my little marks that I made with my outmy little exacto knife in the paper so I know exactly how far down to pipethese and I start from the top may just pull away from the cake andthen just likely push it into the cake when Iget to the bottom you're going to be adding the pearls onthese after so this isn't a hard decoration to dobut it needs to be straight an accurate hand once in awhile that happens get a little air bubble in your icing crop this is why I like to use a needletool just take that of the cake part of thereason that falls off is my buttercream is dry it's it's got alittle bit across Donna so I have to make sure I anchor the top pair I may have had a big air bubble in mypastry bag to so that's how that whole pattern is done all the way around thecake and then a minute take some formillimeter jackie's and I'm airport one at the end every one of these so they look like little pearls dropping not co-operate up the other side here this is the part of cake decorating ittakes a little patience and time alright so now I have my pearls in thatthe shape and I wanted to add more so what I'm gonna do is where I have thesecond the the second longest line right in line with that I'm gonna addone ups to the long line and now where theshort ones come across and then had another rope earlier rightin line with those now and the last one okay and then to finish off the border at thetop I'm gonna move back to a number
and I'm in a pipe right along the topedge scandal attached rainfall right at thevery edge and I'm gonna go back to my largerpearls Eminem what's and I'm gonna put one right atthe top everyone please try to place them asevenly as you can you can move them a little bit notice I'm holding my wrist with myother hand and that will help you study your handand unless you have a super super steady hand you can hold it I'm without shaking just use your other handjust breaks your your elbow against your side and thatassertive of holes as I'm just just something foryour freer hand to hang onto and you actuallycan rest your hand on this arm and then you'll be very steady whenyou're putting the druggie on so that's just a helpful hint on I'mgetting these small details on so we would finish that exact same probspattern all the way around the cake we're gonnamove on to the top tier this is again I am a tip 3: and we're gonna do a lil E thevalley and I'm just gonna who this kickback okay to do this lol um leaf scroll pattern on the top justthink I've mountain peaks disco up and down now the P goes up like this so I wanna makesure that my leaves follow that line here it's coming down so I'm gonna come down see want to keepthem in the same direction I love the the flow that mainline andthen you can branch of a little bit had two more to each one and then we're going to move to a tip 67which is a leaf tip and I'm gonna put a leaf on the end of each one before I do thison the cake I'm gonna soften this icing are so thatthe leaves come to a nice point and that would be the leaves and then Icould go back to I'm a number to tip and I could putlittle tendrils in and I'm just going to start with thewith the a main line was and just pull some little tendrils outto send a little circular motion and that will finish off that pattern sonow I'm gonna pipe that onto the side to the cake told me again by doing my little my little mountain ski again I'm not worried about this I ijust want the overall shape to come out here I'm not worried aboutwhat it really looks like at this point and then meet up in the back and now Ican add my my secondary at my little for my little these are going to be the last one okay to pipe the believes I've takenabout a half a cup of my buttercream icing and I've added about a half a teaspoonof glycerin and this is available I will turn makes this you can buy glycerin in AM in a pharmacyis whether a drug store are you can use water but I find theglycerin gives it a nice costs of consistency and it and theleaves pull out to a nice point very easily I think this works better than water andespecially in a buttercream this this doesn't break apart it doesn'tcause the AC to break down and separate light-water can so I havemight tip
and now I'm gonna and my leaves if youjust but pressure build up a little bit there news at the ends together are youget a little %uh pick a little wrinkle in the leaves justgive them a little motion the trick is to add enough glycerin so that the icing is softincomes almost to a point but if you make it too soft on you getperfect points every time sometimes beliefs or to bomb and troops on wayaround the cake now I purposely have not finished every single tear because Ijust wanna show you arm the decoration and basically how todo it you don't really need to watch me do the entire cake he gets a little boring after a whileI'm so I'll show you all to basic decorations that are on this cake so I'm gonna go ahead and finish thisnow and when we come back we're going to work with the styrofoamdummies and we're going to arrange are gumpaste flowers on the dummy andthen we're going after we get them exactly the way we want then we'll know exactly where we need toput our little holes in the cake and insert some straws where we can putthe stems all the flowers in and it will be easy to transfer thedesign from one cake to the other and that's why the dummycakes really come in very handy the last thing to we're going to add asatin ribbon around the bottom of our board that will match three tiers we'll beright back and look at the flowers on this cake okay the cake is all decorated andbefore we do a spray of flowers down the side of thecake which we're going to start by doing on the cake dummies I wanted to show you some options andhere's one option right just took to sprays all farm hydrangeas and I just set them on top the cake withwanted the peonies and that's all I put on here and that's very popular today is just have afocal flower or very small amount of flowers on the top of the cake I'm using gum paste flowers today butyou can also use fresh flowers if you'd like to arm whatever whatever you would like todo for your wedding I'm so if I take these off and but give you another option and this is just a peony a yellow peony and in this case I would probably setthat P ni I there here or down here but you can get the visual affect I'lljust what one single focal flower will do for your cake so they give you a coupleideas if you don't want a more elaborate offloral display so I'm gonna push this aside panned I'm gonna bring this over andthis is where the cake dummies really really come intoplay and become very very helpful so I'mstarting with three all the love the lily sprays now toprepare these to put into a real cake I'll take the are small dowels or youcan use a drinking straw and just insert that over the and and then you would cut that just so it fits and you would insert that into the cakeand that protects the cake from our from any of the the floral tape or any part of the above the out gumpasteflower and it makes it food safe so that's what we'll do toprepare but to put him into here we're just going touse them as they are okay I'm gonna begin by putting in thefirst Lily spray so I'm any use my needle nose pliers and I'm gonna bend this back and I knowthat i'm gonna want to put that in this sort of position coming down animal I want to put on the edge of thecake so for the dumbing I'm just gonna create a whole I'm just creating a hole in the dummy sothat I can put this here okay hand then you can just adjust the flowerit believes in all the pedals pointing outward okay and now I want to do two more I want onemore coming down this way over here so I'm gonna put in a whole this cake of and I'm also gonna bend that one back these pre-made gum paste flowers arereally quite sturdy and because I'm playing with the dummiesI can put this in anywhere I want and then just turn thecake so that it fills in so that'll be mysecond month the center that que carro and now I haveto figure out where do I want the third one and I think I want that one more up here Sep I want the greenery going up so I mark about right where it'sgonna go hand I'm gonna put a hole in there pool me think this is odd working honestthere from dummy but you're gonna root realize when weput this on the real cake this is gonna make our job much easierokay and I really want this to Ben back herewe go no that's going to give me my littlegrouping and now I have to figure out where Iwant to put my car models I know I want one down here so let's put a hold down here on the small flowers are the singleflowers it's easier just to hold them both players and push them in the pope ok spam not going to fiddle around too muchwith these we're going to put that right back in here there people now I have an idea this gives me sort of a prototype how I'm going tobuild my cake so now the easy part as I pull these out all see where my holes are months he'll get this one out here this man on the side of the cake there cool this line this backup and now I knowexactly where my holes need to go in the cake so thatI can get the same exact look on this case so now I'm just gonna pushthis to the side and start working on the real K you so the first thing I'm gonna do is a manactually make my holes I'm any use arm this little armself-stick and I'm actually going to poke into thecake in create the hole where the flowers will go soul get these done we'll come back andlook at the mall in okay so this is the last hole a min to make I'm just using us help in just pushinginto the cake and and now we BN just push it right into the cake and now you can fiddle with them alittle bit more so I want this to come down hand then I'm gonna had one of my got mylittle straws or cut actually the straws too long to shorterone recover me okay and we want to bring this downunderneath the flower every sir like that all right and nowwe're going to add the second early spring Gloucester onthere actually this preggos up doesn't bull purpose trust a trade in which isgood you know hand third one may have to than that out Ste there now I have another hole right uphere group pool hand let's see we had created can't seemy missing a whole mare I'm just gonna place this morningat max we not gonna create a hole for that was gonna place in place and it's done so it takes a little longer to get them ona on the cake and get them exactly where you want but having done them on the dummy firstgive you an idea of where to place the flour so that you notsticking him all over the cake and then trying to pull them out and cover and patch up again arm so as abeginner this would be the best way for you to do this arm is one last thing I want to show youon this cake arm we're just going to take a quickbreak I'm gonna come back and I'm gonna show you how this fourtier cake can become a three tier cake we're going to eliminate the bottom tierI'm gonna lift up these three tiers and I'm gonna put them on pedestal so ifyou wanna have like a small garden wedding you just wanna three tier cake with the same design you'll see what itlooks like we'll be right back okay as promised Itook off the bottom tier and I put on this pedestal stand so thatyou could see what a cute little three-tiered cakethis makes perfect for a small wedding arm I believe that the whole cake servesabout people that does not include the top tier Iallow you to keep the top tier for your first anniversary which is usually the custom here in theUnited States so these bottom three tiers would serve about a hundred andfifty these bottom to tears on this cake wouldserve about people arm so if you're only having fifty orsixty people and you liked this cake there's noreason why you can't bake regular cakes and use a Styrofoam dummyas your bottom tier you can make this a five tier cake ifyou want and make par to the cake styrofoam and then the rest a bit real cake itwould still be iced and it would still be decorated this isa very very common practice today to enlarge your wedding cake and justmake it the way you want it to be by using star from dummies just like thedummies that I used throughout this whole procedure today showing you how do youhow to decorate and how to add the flowers those samedummies can be iced decorated in using your
