How to Make a Wedding Cake: Baking and Frosting (Part 1) from Cookies Cupcakes and Cardio
hi everybody this is Dan from cookiescupcakes in cardio dot com I want to welcome you to the first videoother three part series on how to bake a wedding cake this first video today isgoing to be the process a baking the cake andcovering it in a buttercream the subsequent videoswill include how to tear the cake which is stacking it and the last video will include how todecorate the wedding cake so make sure you stay tuned for thosecoming up in the future let's get started so the first thing I'mgoing to talk to you about are the baking pans to makerthree-tiered wedding cake the big one at the bottom is a 10-inchround I'm cake pan and that's going to be ourbase our next a middle-tier is going to be an and our top tier is going to be a sixinch round cake now each of these will need to be baitto time so when we're finished you can have to inches inches and inches to complete the cake this is called aheating core and what this heating core does is youplace it in the center love each of your pants if you choose toyou don't have to use it but it kinda speeds up this though itspeeds up the baking time up the cake any put a little bit of cakein the center as well heating core and that leave so that whenthere's a whole left in the cake you still have the cake that pops outfrom the center the heating core I'm not going to be using that but I dowanna tell you about it because it is a handy thing to use specially when you'remaking I'm larger wedding cakes now these cakepans have street sides which is something that you want to makesure that your cake pans have see don't have any angles to your wedding cake and he's under each three inches highand the cakes will be baking to be about a total up to two inches in height so we're going to start thebaking process next we're going to start out baking r6 inchcake for the six inch cake you're going toneed to cops a batter per layer so in total for thetop tier you're going to need four cups of batternow I am using a homemade vanilla recipe which will put a link in the descriptionbox for you but you can use any kind of cake thatyou choose you can also use a box mix if you prefer that as well you just needto make sure your measurements are the same at so I'm just taking some non-stick sprayand I'm spraying my parent here and I'm also putting a layer of waxpaper in the bottom that just helps put the cake out a loteasier when the cake is finished so then ingoes my daughter and I'm going to be taking this one at to degrees Fahrenheit and it willbake for about I'm minutes and then it should benice and finished something pop it in the oven and thenI'll have to repeat the process so I want you to make sure but you're remembering that you have todo two layers per size %uh cake pan our next two layerswill be the middle tier and it is the 8 NH so again and sprayingmy pan and I'm going to be using per layerthree-and-a-half cough I love leave cake batter for this layer give it another stray so you lied sevencups in total for the middle tier and it's going to bake 4 so I'm probablyabout
to minutes at degrees Fahrenheit so in a pop that in spread this around first and then pop it into the open andthen we will be working on our largest herenext now we're onto our largest here whichwill be the bottom in it is the per inch layer we're going to beusing six cops a batter so in total we're going to beusing I cups a batter altogether for both the volunteers so I'm puttingthis the wax paper and again at the bottomyou can use parchment paper if you prefer and is putting this in now this onebeing that it's the largest it's obviously going to bake for a longertime it's still going to be baking at 350degrees and it's going to bake for about to minutes and you just wanna watch it to make surethat it's completely finished in the center in springs back to your touch so many pop that an and all the dockwith all love the cupcakes so all six love the cakes have bakes anice in golden brown but if you notice when you been bakingKatie might find there's a slight dome so what we're going to do next is we'regoing to level each of them of because we can't we will need to haveour wedding cakes be completely flat so the State Street up and down so I'mgoing to level of my cakes now and what I'm using is a large Ateco cakeknife and it's just got a serrated blade if you don't have one of these you canjust use a regular kitchen serrated knife it works just the same so I'm just putting it here and inkeeping the blade level while turning the cake around here on myturntable an unjust making sure that I'm using asawing motion because I don't want any part up the cake to tare I want it all to becut in this level area here like that and you can see aslide easily of just like that someone to repeat thatfor all six are the layers no other cakes are all levels what I'mgoing to talk to you about next our cake boards no keyboards areessentially just cardboard pieces and a covered with foil this one is quite thin it's thateight-inch one that I'm going to be using for my 8 inch layer now this one is a six inchone and as you can see it fits perfectly on top love my six inch cake now this one is abit larger and it's actually called a cake drum and it's thicker it's meant to be usedon the bottom love tier cakes or what not now these two Ipurchased locally at a cake store you can find them at Meijer stores suchas Michaels and what not you can even buy them online Amazon eBay try those out theyjust called cake ports and this one actually make made you justcut it out out of cardboard and then you cover itwith your own foil so that's what we need next to support the cake so nowwe're going to start covering it by in buttercream so now Ineed to attach my cakes to my boards so I'm going to do out for glue isn'tjust going to use a little bit if I same to smooth out into the middle there likethat and then I just put my cake in the centre thereof the port just like that now you may notice thatthe because this one is the bottom one it is a little bit bigger band that theother 8 in the six in sports for this one wewant the base to be a little bit bigger because when you're transporting thecake want somewhere for your fingers to beable to go so that's why this board is little bit bigger than the actual cakeso this win total is at inches in diameter so now we'rejust going to start by putting a thin layer a buttercream inbetween here like this and then I'm going to plop the top part above my knee bottom layer summit other tenants justlike that want too much from the scraping some oflike that and then and is going to place thesecond one on top just like that so I'm gonnarepeat that process for each of the three tears now we haveall three of our tears the layers are all stacked on top nowwe're going to do is we're going to do our crumb coat a crumb coat is the initial layer abuttercream that goes on to the cake to catch any upthese crumbs that come off as your applyingthe buttercream to the sides in total I'm probably going to be usingabout
cups a buttercream and I will put the link in thedescription box below to my vanilla buttercream recipe that wealready have up on the channel so I'm just going to coat all three ofthese cakes in my initial crumb coat and then I'll be back to show you thefinal step to this initial video in the series so the laststep to icing the cake after the crumb coathas caught all other up the crumbs from the sides of the cakewe're going to use more butter cream and just cover itcompletely something to do all three of these adifferent cakes and then will be finished how to bakeentice a wedding cake so there you go everybodyI have finished off at the beginning stages I lovebaking a wedding cake we've got it covered in buttercream andthe following videos are going to cover how to stack the wedding cake which we called hearingand how to decorate the wedding cake for a final product so make sure youstay tuned for Lowes and I will see you next time
